Tataki Sushi Ingredients
  • 100g fresh beef sashimi
  • 1.5 bowls cooked rice
  • 3 Tbsp rice vinegar
  • 3 Tbsp sugar
  • 1 tsp salt

Cooking Instructions

Step 1

First, let’s prepare the sweet vinegar for the sushi rice. In a wide bowl, combine 3 tablespoons of rice vinegar, 3 tablespoons of sugar, and 1 teaspoon of salt. Stir thoroughly until the sugar and salt are completely dissolved. Add 1.5 bowls of warm cooked rice and gently mix with a rice paddle, being careful not to mash the grains, to create a delicious sushi rice base.

Step 2

Shape the seasoned sushi rice into oval portions, forming your sushi. Gently spread about 1 teaspoon of wasabi onto the top of each sushi rice portion. The subtle kick of wasabi will beautifully complement the beef.

Step 3

Now, carefully place a slice of the fresh beef sashimi (100g) onto each portion of sushi, covering it completely. The vibrant red of the beef will make the sushi visually appealing.

Step 4

Let’s create the tataki effect! Using a kitchen torch, lightly sear the top surface of the beef sashimi. Before using the torch, ensure the surrounding area is clear of any flammable materials and proceed with caution for safety. This step infuses the beef with a wonderful smoky aroma, enhancing its flavor.

Step 5

Time to add a special Korean-inspired sauce! Delicately place about half a teaspoon of gochujang (Korean chili paste) onto the seared beef. This adds a delightful spicy note that elevates the tataki’s overall taste.

Step 6

Arrange 9 thin slices of garlic attractively on top of the gochujang. The gochujang will help the garlic slices adhere neatly. Your special Beef Tataki Sushi is now complete! The sushi rice is already seasoned, and with the gochujang and wasabi, it’s flavorful on its own. If you desire extra dipping sauce, wasabi soy sauce or teriyaki sauce would be excellent choices.

Step 7

Beyond the tataki sushi, let’s artfully present the remaining 200g of beef sashimi. Arrange the beef slices around the outer edge of your serving plate. In the center, create a beautiful ‘beef flower’ using the remaining sashimi. Surround the flower with finely diced pear for freshness, and tuck a rolled mugwort leaf into the center of the beef flower for a touch of color. Finally, insert a heart-shaped candle to complete your stunning ‘Beef Birthday Cake’! Enjoy making and sharing this unique creation for a memorable celebration.
