This makes them irresistible even for picky eaters. Depending on their shape and size, these can also be enjoyed as Fig Potato Hot Dogs. Baking them in an air fryer results in a wonderfully light and savory crunch. Enjoy this unique treat!

Croquette Dough Ingredients

  • 2 fresh figs
  • 2 dried figs
  • 40g onion
  • 20g carrot
  • 4 portions spring cheese (or mozzarella cheese)
  • 1 Tbsp fig jam
  • 1 Tbsp ketchup (optional, for reducing richness)
  • 3 pinches salt
  • Pinch of black pepper

  • 1/2 egg

Cooking Instructions

Step 1

– Prepare Ingredients: First, check the cheese you’ll be using. You can substitute mozzarella cheese for spring cheese. For the filling of the croquettes, prepare the fresh figs and cheese according to the shape you plan to make.

Step 2

– Cut Filling Ingredients: For round croquettes, cut the fresh figs into quarters and the cheese into two pieces. If you prefer a hot dog shape, cut the fresh figs into long wedge shapes and the cheese into two pieces. (Tip: Adjusting the size of the filling ingredients according to the desired shape can improve the outcome.)

Step 3

– Mince Vegetables and Dried Figs: Finely mince the onion, carrot, and dried figs. Minced vegetables blend better with the potatoes and create a smoother texture inside the croquettes.

Step 4

– Sauté Vegetables: Lightly grease a heated pan and sauté the minced onion and carrot over low heat until translucent. This process enhances the vegetables’ natural sweetness and reduces moisture, intensifying their flavor.

Step 5

– Prepare and Cut Potatoes: Peel the potatoes and cut them into small, uniform pieces (about 1-2 cm) for easy microwaving. The shape doesn’t matter as much as the size, as smaller pieces cook faster.

– Microwave Potatoes: Place the cut potatoes in a microwave-safe dish or a sealed plastic bag. Cook for about 4 minutes using the microwave’s ‘steam’ or ‘boil’ function. If these functions aren’t available, microwave on high for about 4-5 minutes. (Tip: Cooking time may vary depending on your microwave. If using a plastic bag, leave the opening slightly ajar to allow steam to escape.)

Step 7

– Mash Potatoes: Carefully remove the cooked potatoes from the microwave while they are still hot. Use a fork or a potato masher to mash them thoroughly until smooth, ensuring there are no lumps.

– Mix Dough Ingredients: Add the sautéed vegetables, minced dried figs, fig jam, ketchup, salt, and pepper to the mashed potatoes. Knead the mixture well until all ingredients are evenly combined, forming a cohesive dough. (Tip: Ketchup can balance the richness but is optional. Adjust the sweetness of the fig jam to your preference.)

Step 9

– Fill and Shape: Scoop out portions of the potato dough, flatten them, and place the prepared fresh fig and cheese in the center. Gently wrap the dough around the filling to enclose it. For a hot dog shape, use about two scoops of dough, form it into an oval, and then enclose the filling.

– Coat with Batter: Whisk the egg in a bowl. Dredge each shaped croquette first in flour, then dip it in the whisked egg, and finally coat it evenly with breadcrumbs. Ensure a good coating of breadcrumbs for a crispy exterior after baking.
