  • 1/4 onion, finely chopped
  • 80g pickles, finely chopped
  • 2 Tbsp mayonnaise

Next, finely chop about 80g of pickles. Pickles bring a pleasant tanginess and crunch. If the pickles are very moist, gently squeeze out any excess liquid before chopping.

Combine the finely chopped onion and pickles in a bowl. Now, add 2 tablespoons of mayonnaise to bind everything together and create a creamy texture.

Mix the ingredients thoroughly with a spoon or spatula until well combined. Taste the mixture and, if you prefer a creamier consistency or more mayonnaise flavor, feel free to add a little more. And just like that, your delicious topping is ready! Isn’t it incredibly simple?

Now, let’s prepare the eggs. Carefully place 3 eggs in a pot and cover them with water. Boil the eggs until they reach your desired doneness – soft-boiled for a gooey yolk or hard-boiled for a firmer texture. Both are delicious!

I’m preparing mine soft-boiled today. Once cooked, immediately transfer the eggs to an ice bath to cool them down. This makes peeling easier. After peeling, carefully slice off a tiny bit from both ends of each egg. This creates a flat base, ensuring the topping stays put when you assemble them.

Slice the cooled eggs in half lengthwise. Generously spoon the prepared topping mixture onto each egg half. Arrange them on a platter, and your festive finger food, topped eggs, is complete!
