My eldest daughter, who usually dislikes kimchi, absolutely adores my homemade Kimchi Spam Fried Rice! Even our youngest, who is 4 years old, enjoys it immensely. It’s a delicious meal that everyone, young and old, can enjoy. Try making this simple yet flavorful Kimchi Spam Fried Rice today!

Main Ingredients
  • 1 bowlful of well-fermented kimchi (approx. 200g)
  • 1/2 medium onion
  • 1/3 stalk of green onion (white part mainly)
  • 1 can of Spam (200g)
  • 2 sheets of seasoned seaweed (gim/laver), 5g each
  • 3 bowls of warm cooked rice
  • 1 egg (optional, for topping)

Seasoning for Frying
  • 3 Tbsp cooking oil
  • 4 Tbsp oligosaccharide (adjust sweetness to taste)
  • 2 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the kimchi. Fill a bowl generously with well-fermented kimchi. To ensure a pleasant texture, finely chop the kimchi using scissors. Avoid chopping it too finely, as this can diminish the satisfying chewiness.

Step 2

Onions add a touch of sweetness and reduce the sharpness of the kimchi, enhancing the overall flavor of the fried rice. Peel and wash half a medium onion, then finely mince it so it blends well into the rice.

Step 3

Spam is a key ingredient that brings a savory umami to the fried rice. Take one small can (200g) and dice it into bite-sized pieces or cut it into small strips. You can also cut it into thicker pieces if you prefer.

Step 4

Heat 3 tablespoons of cooking oil in a pan over medium heat. For an even richer flavor, you can first sauté the green onion to release its aroma, then add the chopped kimchi, Spam, and onion together and stir-fry. (Tip: If you’re short on time, adding all ingredients at once still results in delicious fried rice!)

Step 5

Stir-fry all the ingredients for about 5 minutes over medium heat. This helps evaporate some moisture from the kimchi and onion, making them tender. Now, add 4 tablespoons of oligosaccharide and mix well with the other ingredients. Oligosaccharide balances the tanginess of the kimchi and gives the fried rice a beautiful sheen. (Adjust the sweetness according to your preference.)

Step 6

Prepare 3 bowls of warm cooked rice. Gently loosen any clumps of rice before adding it to the pan.

Step 7

Add the 3 bowls of rice to the cooked kimchi mixture. Using a spatula, gently toss and mix the rice with the ingredients, being careful not to mash the rice grains. Continue to stir-fry for about 3 more minutes until the seasoning is evenly distributed, then turn off the heat.

Step 8

Seaweed (gim/laver) is a secret ingredient that adds another layer of flavor to the fried rice. Have two 5g sheets of seasoned seaweed ready.

Step 9

Crumble the seasoned seaweed sheets over the fried rice. Drizzle in 2 tablespoons of sesame oil and add 1 tablespoon of toasted sesame seeds. Gently mix everything together. For an extra touch, you can press the fried rice lightly in the pan over low heat for about a minute to achieve a slightly crispier texture. If desired, top with a fried egg for an even more satisfying meal!
