Ingredients- 80g All-purpose flour
- 2g Baking powder
- 60g Granulated sugar
- 2 Large eggs
- 30g Oligosaccharide (adds moisture)
- 100g Unsalted butter
- 2g Salt
- 1 Packet instant coffee mix (for rich flavor!)

Step 1
1. First, in a clean bowl, crack 2 large eggs and lightly whisk them. 2. Gradually add the 60g of granulated sugar to the whisked eggs in 2-3 additions, stirring gently until the sugar is dissolved and well combined. Ensuring the sugar is fully incorporated is key.
Step 2
Once the sugar and eggs are partially combined, add 30g of oligosaccharide. Whisk vigorously until the batter becomes smooth and glossy. Oligosaccharide is a secret ingredient for extra moist madeleines.
Step 3
Now it’s time to add the dry ingredients. Sift 80g of all-purpose flour, 2g of baking powder, and 2g of salt together into the bowl. Use a whisk to quickly and gently mix until just combined, being careful not to overmix. Stop once you no longer see any dry flour streaks.
Step 4
1. Melt 100g of unsalted butter by microwaving it for about 30 seconds. Let it cool slightly so it’s not too hot. 2. Pour the melted butter into the batter. Whisk again gently with a whisk until the butter is fully incorporated. It’s important to mix well to prevent the butter from separating.

1. Now for the rich mocha flavor! Pour 1 packet of instant coffee mix into a small cup. Add a tiny amount of hot water (about 1 teaspoon) and stir until the coffee is dissolved into a concentrated liquid. 2. Add this concentrated coffee mixture to the batter and whisk gently one more time until everything is well combined. Your delicious mocha madeleine batter is now ready!

Cover the bowl with the batter tightly with plastic wrap. Refrigerate the batter for at least 1 hour to rest. Chilling the batter helps develop the characteristic hump of a madeleine.

Preheat your oven to 180°C (350°F). When filling the madeleine molds, fill each cavity only about 60-70% full. The batter will puff up as it bakes, so overfilling can cause them to overflow. Using a piping bag can make this process neater and easier.

Bake in the preheated oven at 180°C (350°F) for approximately 15 minutes, or until golden brown. Baking time may vary slightly depending on your oven.
