This is a new menu item that has become a huge hit in my household since I developed it recently. While inspired by the standard cabbage salad served with tonkatsu, the dressing is entirely different and much more flavorful. I’m especially proud that such a delightful taste can be achieved without using mayonnaise! It pairs exceptionally well with fried foods. It’s a perfect healthy complement to dishes like tonkatsu, chicken cutlets, chicken nuggets, chicken fingers, fish sticks, and mozzarella sticks – foods that can quickly become heavy or monotonous without a fresh, zesty side.

Main Ingredients

  • 1/3 head of cabbage (approx. 700g)

Dressing Ingredients

  • 5 Tbsp Dijon mustard
  • 5 Tbsp honey
  • 3 Tbsp perilla oil
  • 1 Tbsp vinegar
  • 1/2 tsp salt
  • 1 Tbsp ground perilla seeds
  • 1/4 tsp black pepper

Cooking Instructions

Step 1

Using a mandoline slicer is best for this salad. Don’t worry if the blade isn’t serrated; the natural grain of the cabbage will allow it to be thinly sliced. Aim for fine, even shreds.

Washing the Cabbage: While some say the inner core of cabbage is clean enough not to wash, I prefer to give it a quick rinse under cold water for extra freshness and hygiene.

Draining and Drying: After washing, place the shredded cabbage in a colander to drain thoroughly. For extra crispness, you can gently pat it dry with paper towels.

Preparing the Dressing: While the cabbage is draining, combine all the dressing ingredients in a mixing bowl. The order in which you add them doesn’t matter.

Whisking the Dressing: Whisk the ingredients together until the honey and salt are fully dissolved and the dressing is well combined. It’s as simple as that!

Tossing the Salad: Add the drained cabbage shreds to the dressing. Gently toss everything together using a spatula and chopsticks, being careful not to mash the cabbage. It might look like a lot of salad, but it pairs so well with fried foods that it disappears quickly!
