As the cool breeze begins to blow, autumn radishes reach their peak sweetness and deliciousness! We can’t miss this season. I’ve made a wonderful side dish with readily available radish, the ‘Umami Explosion Radish Side Dish’. With just this one dish, you won’t need any other side dishes because it boasts such a rich flavor. Experience a taste that will make your rice disappear!
Main Ingredients
- 400g radish (approx. 1/4 of a medium radish)
- 1/2 tsp fine salt
- 2 Tbsp perilla oil
Seasoning Ingredients

- 1/2 Tbsp tuna extract (or anchovy sauce)

Cooking Instructions
Step 1
First, prepare about 400g of fresh radish. Peel the radish thoroughly and julienne it into thick strips, about 0.5cm thick. If they are too thin, they might become mushy when cooked, so cutting them a bit thicker is recommended.
Step 2
Add 1/2 teaspoon of fine salt to the julienned radish and gently mix with your hands. Let it sit for about 5 to 10 minutes. This process will draw out moisture, making the radish softer and allowing it to absorb the initial seasoning.
Step 3
Now, let’s add a sweet aroma. Heat a pan over medium heat, add 2 tablespoons of perilla oil, and sauté 1 tablespoon of minced garlic until lightly golden. It’s perfect when you can smell the garlic aroma and it starts to slightly bubble.
Step 4
Once the perilla oil and garlic aroma are released in the pan, lightly drain the salted radish strips from any excess liquid and add them to the pan. Stir-fry them until the radish is evenly coated and starts to soften.
Step 5
When the radish strips begin to turn translucent, cover the pan with a lid and cook over low heat until tender. Covering the pan allows the radish to cook in its own steam, resulting in a much softer texture. Cook for about 3 to 5 minutes.
Step 6
Once the radish is tender, remove the lid and add 1/2 tablespoon of tuna extract to season. Tuna extract adds a deep umami flavor; you can also use anchovy sauce or soy sauce. Taste and adjust the seasoning according to your preference.
Step 7
Finally, sprinkle a pinch of sesame seeds and mix them in. This adds a nutty aroma and further enhances the flavor of the radish side dish. Be careful not to stir too vigorously when mixing the sesame seeds.
Step 8
Transfer the deliciously prepared radish side dish to a serving plate. This makes a perfect side dish that will enrich your meal! It’s also incredibly delicious served over warm rice as a simple rice bowl.
