Authentic Chicken Curry Recipe: A Delightful Blend of Savory and Aromatic Flavors
There are certain dishes that inexplicably call to us, becoming comfort food we crave regularly. For many, that dish is curry rice. Its enticing aroma makes it incredibly appealing! Since moving to Canada, I’ve experienced authentic Indian curries and realized they differ significantly from the ones common in Korea. However, I personally enjoy both, so I frequently make and savor Indian, Japanese, and Korean-style curries alike. Today, I’m using a popular Korean curry powder brand (O*gi) to create a more exotic version of this beloved dish. The secret lies in adding butter and paprika powder! The subtle richness of butter combined with the smoky notes of paprika powder will elevate your everyday curry into something truly special and captivating. Ingredients
- 250g chicken breast, cut into bite-sized pieces
- 1 potato, peeled and diced into 1.5cm cubes
- 1/2 carrot, peeled and diced into 1.5cm cubes
- 1 onion, diced into 1.5cm pieces
- 50g spicy curry powder
- 350mL water
- 2 Tbsp paprika powder
- 2 Tbsp butter, divided
- 1 Tbsp cooking oil
- 1/2 stalk scallion, finely chopped for garnish
- 1 tsp sesame seeds, for garnish
Cooking Instructions
Step 1
Let’s start by preparing the vegetables. Dice the potato and carrot into roughly 1.5cm cubes. Dice the onion into similar-sized pieces. Lastly, finely chop the scallions for garnish.
Step 2
Now, let’s prepare the chicken breast. Cut the chicken breast into similarly sized pieces, about 1.5cm, matching the vegetables. This ensures a pleasant texture and prevents the ingredients from breaking down too much as the curry cooks.
Step 3
It’s time to start cooking the curry! Place a pot over medium heat and preheat for about 3 minutes. Add 1 tablespoon of butter and melt it. Once melted, add the diced onion and sauté for about 3 minutes until it becomes translucent and sweet. Then, add the prepared chicken breast and stir-fry until it’s lightly browned and fragrant.
Step 4
Once the chicken is nicely browned, stir in 2 tablespoons of paprika powder and cook for another minute to release its aromatic essence. Pour in 350mL of water and bring it to a boil. Once boiling, whisk in 3 to 4 tablespoons of your chosen curry powder (adjust to your spice preference). Since curry powder can easily stick to the bottom, stir continuously as it simmers. Add the prepared potatoes and carrots. Continue to cook over medium heat, stirring occasionally, for about 15 minutes, allowing the flavors of the chicken and vegetables to meld beautifully with the curry sauce.
Step 5
As the curry is bubbling away, let’s add the final touch for an extra layer of flavor! Stir in the remaining 1 tablespoon of butter. This will add a subtle richness and a more complex, exotic taste to your curry. Your delicious curry is now ready! Garnish with the finely chopped scallions and sesame seeds for a visually appealing and appetizing presentation.
