Enoki Mushroom and Tuna Kimchi Stir-fry: A Simple and Delicious Rice Companion

We’ve created a unique twist on the classic kimchi stir-fry that pairs wonderfully with any meal. This dish is universally loved for its delicious flavor profile.
Main Ingredients- 1/2 head of well-fermented Napa cabbage kimchi (older kimchi works best)
- 1 small can of tuna (drained)
- 1 small pack of enoki mushrooms
- 1/2 stalk of green onion
Seasonings- 1 Tbsp soy sauce
- 1 tsp minced garlic
- 2 Tbsp sugar
- A pinch of black pepper
- 2 Tbsp olive oil
- 1 tsp sesame oil
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
Start by preparing your well-fermented Napa cabbage kimchi. For the best texture in the stir-fry, it’s recommended to remove or finely chop any excess radish or filling inside the kimchi. Cut the kimchi into bite-sized pieces, about 2-3 cm long.
Step 2
Drain the oil from the small can of tuna. Too much oil can make the dish greasy, so either strain it thoroughly or press lightly with a paper towel to remove excess oil.
Step 3
Heat 2 tablespoons of olive oil in a pan. Add 1 teaspoon of minced garlic, 2 tablespoons of sugar, 1 tablespoon of soy sauce, and a tiny pinch of black pepper. Once the aromatics are fragrant, add the chopped kimchi. Stir-fry over medium-high heat for 5 minutes. Adjust the amount of sugar and soy sauce based on the sourness and saltiness of your kimchi. Continue to stir-fry until the kimchi softens and absorbs the seasonings well.
Step 4
Trim the base of the enoki mushrooms. Gently separate the mushroom clusters and cut them into lengths of about 2-3 cm. Cutting them into larger pieces will help maintain a pleasant texture after stir-frying.
Step 5
Finely chop the green onion. The fresh aroma of the green onion will enhance the overall flavor of the kimchi stir-fry.
Step 6
Add the prepared enoki mushrooms and chopped green onion to the kimchi that has been stir-fried for 5 minutes. Continue to stir-fry everything together. Enoki mushrooms cook very quickly, so just stir-fry until they are slightly wilted and combined with the other ingredients.
Step 7
Finally, drizzle in 1 teaspoon of sesame oil and sprinkle with 1 tablespoon of toasted sesame seeds. Stir everything together and cook for another 2-3 minutes until the flavors meld. This dish is great to make in a larger batch and enjoy as a side dish throughout the week, or mixed with rice for a quick and satisfying meal. It stores well in the refrigerator.
