June’s Revitalizing Dish: Delicious Beef and Ginseng Curry Recipe
To combat the June heat and boost energy, I’ve created a unique curry recipe incorporating nutritious ginseng with tender beef. This hearty and flavorful dish is perfect for a revitalizing meal that will leave you feeling satisfied and energized!
Main Ingredients- 200g Beef sirloin
- 1/2 Carrot
- 1/2 Onion
- 1 Potato
- 1 handful Green beans (approx. 50g)
- 2 cubes Solid curry roux (adjust to taste)
- 100ml Milk
Cooking Instructions
Step 1
Let’s start by preparing the ingredients for a delicious curry! Thoroughly wash all the vegetables. Pat them dry and trim as needed for cooking.
Step 2
Dice the potato, carrot, and onion into uniform, bite-sized cubes. Cutting them to a similar size will ensure they cook evenly and hold their shape.
Step 3
Now, let’s prepare the ginseng, the special ingredient! Remove the tough core (the thin, stringy part) of the ginseng. Slice the main body thinly into rounds, and finely mince the root part to infuse its flavor throughout the curry.
Step 4
Season the beef sirloin lightly with salt and pepper. This simple seasoning will enhance the meat’s flavor and tenderness.
Step 5
Begin building the curry’s flavor base. Heat some oil in a pot over medium heat. Add the diced potatoes, carrots, and the prepared ginseng. Sauté them until they start to soften and release their sweetness.

After about 10 minutes, when the carrots have developed a richer color, add the chopped onion to the pot. Continue to sauté for another 3 minutes until the onion turns translucent and sweet.

Pour enough water into the pot to cover the vegetables, or slightly above them. Bring to a boil, then reduce the heat, cover, and simmer for about 7 minutes until the vegetables are tender.

While the vegetables are simmering, heat a separate pan with a little oil. Add the seasoned beef and stir-fry over medium-high heat until it’s browned on the outside. Avoid overcooking to keep the beef tender.

Once the beef is browned, add the green beans to the pan and stir-fry with the beef for 1-2 minutes. This will lightly cook the beans, keeping them slightly crisp.

Add the stir-fried beef and green beans to the pot with the simmering vegetables. Stir everything together and continue to simmer, covered, allowing the flavors to meld.

After 7 minutes of simmering, check the vegetables by piercing a carrot or potato with a fork. If they are tender, it’s time to add the curry roux and milk. The milk will add a lovely creaminess and richness to the curry.

Stir in the solid curry roux and milk. Continue to simmer for about 3 more minutes, stirring occasionally, until the curry has thickened and the roux is fully dissolved. Your delicious Beef and Ginseng Curry is ready! Serve hot over rice and enjoy!
