While abalone butter stir-fry is familiar, adding fragrant ginseng elevates it to a fantastic combination that captures both health and taste. Step 1
First, prepare the fresh abalone. Use a clean brush to thoroughly scrub the abalone, ensuring you clean away any debris between the shell and the meat. Carefully separate the abalone meat from its shell, then place it on a colander to drain excess water.

For the separated abalone meat, carefully use a knife to remove the hard mouthparts (beak) located on the underside. Also, cleanly remove the innards. Next, score the surface of the abalone meat with a knife. This scoring will help the sauce penetrate better and result in a more tender texture when cooked. Cut the abalone into bite-sized pieces.

Trim off any small, rough roots from the fresh ginseng using a knife and wash it thoroughly under running water. Gently pat the surface of the ginseng dry with paper towels.

Slice the cleaned ginseng thinly into pieces. Slicing it thinly ensures a pleasant texture and good flavor balance when stir-fried with the abalone.

Now, let’s begin the stir-frying process. Heat a pan over medium heat and add 1 tablespoon of butter to melt and create a rich base.

Once the butter has melted and its aroma is released, add all the thinly sliced ginseng pieces to the pan. Drizzle in 1 tablespoon of plum extract and 1 tablespoon of oligosaccharide. Stir-fry for about 1 minute, allowing the fragrant ginseng aroma to develop.

You’ll notice the edges of the ginseng slices starting to turn slightly golden and reduce. At this point, reduce the heat to medium or low to prevent the ginseng from burning. Be careful and continue stirring.

Once the ginseng is lightly stir-fried, add the bite-sized abalone pieces to the pan. To effectively eliminate any potential fishiness from the abalone, add 1 tablespoon of mirin (cooking wine). Then, season with 1 teaspoon of herb salt and 1 tablespoon of soy sauce for simmering. Stir-fry until all ingredients are well combined and coated.

Continue to stir-fry for approximately 5 minutes, allowing the abalone to absorb the delicious sauce and cook through. Be mindful not to overcook the abalone, as it can become tough. The dish is ready when a wonderful aroma fills the air.
