Step 1

Let’s start by preparing the seafood and vegetables. Peel and devein the shrimp. Clean the squid and slice it into thin strips. Slice the onion similarly to the squid. Thinly slice the garlic cloves to release their aroma. Having all your ingredients prepped makes the cooking process much smoother.

Now, let’s prepare the tomatoes for a tender texture. Make a shallow cross-shaped cut on the skin of 2 ripe tomatoes. Blanch them in boiling water for about 30 seconds to 1 minute until the skins loosen easily. Immediately rinse them under cold water to stop the cooking and cool them down. Gently peel off the skins; they should come off cleanly.

Step 3

The peeled tomatoes will be the star of our sauce. Finely chop the 2 peeled tomatoes. This will create a rich and flavorful base for our stir-fry. Cut the remaining 1 tomato into bite-sized pieces. These chunks will add a fresh texture to the dish at the end.
