Rice Roll Ingredients

  • 1 bowl of cooked rice (using Chamdream Rice (Gyeonggimi) is highly recommended for superior flavor)
  • 150g minced beef
  • 12-16 fresh cabbage leaves
  • 1/4 block of firm tofu
  • 30g chives
  • 3 tbsp chopped green onion
  • A little red chili pepper (for garnish)
  • 1 egg

Beef Marinade

  • 1 tbsp soy sauce
  • 1/2 tbsp minced garlic
  • A little grated ginger
  • 1/3 tbsp sugar
  • 1 tbsp cooking wine (mirin)
  • A little sesame oil
  • A pinch of black pepper

Teriyaki Glaze

  • 3 tbsp store-bought teriyaki sauce
  • 7 tbsp water

Rice Seasoning

  • 1 tbsp soy sauce
  • A little sesame oil

Rice Base Seasoning

  • 3-4 pinches of salt
  • A little sesame oil

Cooking Instructions

Begin by preparing 2 cups of Chamdream Rice (Gyeonggimi), a variety known for its exceptional flavor. The quality of the rice is crucial for the overall taste of the cabbage rolls.

Cook the rice until it is fluffy and firm. Rice for rolls should not be too mushy.

Place the 150g of minced beef on paper towels and gently press to remove any excess blood. This step helps to eliminate any gamey odors and ensures a cleaner beef flavor.

In a bowl, combine the drained minced beef with all the ‘Beef Marinade’ ingredients. Mix well by hand and let it marinate while you prepare the other ingredients. This allows the flavors to penetrate the meat.

Trim the thick, tough part of the stems from the fresh cabbage leaves to make them easier to roll. Be careful not to remove too much, as this could cause the rolls to unravel.
