  • 1/4 Broccoli
  • 2/3 Sweet potato
  • 2/3 Potato
  • 1/3 Carrot
  • 1/2 Eggplant
  • 1 Tomato
  • 1 Onion
  • 2 cloves Garlic
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish
  • Hemp seeds for garnish
  • Cooking oil (olive oil or vegetable oil)
  • 30g Cashews
  • Sesame seeds for garnish
  • A dash of sesame oil
  • 500ml Water

First, prepare the vegetables that will add flavor to the curry. Wash the lotus root, zucchini (or Korean pumpkin), broccoli, sweet potato, potato, carrot, and eggplant thoroughly, then cut them into bite-sized pieces. Lightly season them with salt and pepper. Also, prepare fresh parsley for garnishing the roasted vegetables.

Prepare the cashews for a creamy texture, sesame seeds for nuttiness, and a touch of sesame oil. Also, get your tomatoes ready for a vibrant color, onion for aromatic depth, and garlic for that essential savory base. Once all ingredient preparations are complete, let’s begin making this delicious roasted vegetable curry.

Arrange the prepared lotus root, pumpkin, potato, carrot, sweet potato, eggplant, and broccoli attractively on a baking sheet.
