- 3 Tomatoes
- 1/2 Onion
- 3-4 cloves Garlic
- 1 Tbsp Store-bought Tomato Sauce
- A little Cooking Oil
- A little Salt
Cooking Instructions
Step 1
First, let’s prepare the sauce that will add depth of flavor to the Ratatouille. Make an ‘X’ cut on the skin of 3 tomatoes, then blanch them in boiling water to easily peel off the skin. This helps create a smoother sauce.
Step 2
Finely chop the peeled tomatoes and 1/2 onion. Chopping the vegetables finely will allow them to meld together and create a richer flavor when the sauce simmers.
Step 3
Lightly grease a pan with cooking oil. Add the chopped onion and tomatoes and sauté over medium heat, stirring constantly to prevent burning. Cook until the vegetables soften and their moisture has reduced.
Step 4
Once the vegetables are well sautéed, add about 1 tsp of salt and 1 Tbsp of store-bought tomato sauce. Mix well. Using a tomato sauce with added spinach or basil can enhance the flavor further. Feel free to adjust the amount of sauce to your preference.
Step 5
Now, let’s prepare the main vegetables for the Ratatouille. Slice 1/2 zucchini, 1/2 eggplant, and 2 tomatoes into uniform slices, about 0.5 cm thick. Slicing the vegetables to a similar thickness ensures they cook evenly, creating a beautifully arranged dish. This amount is sufficient for two generous servings.
Step 6
Spread a thin layer of the prepared tomato sauce on the bottom of an oven-safe dish. Then, artfully arrange the sliced zucchini, eggplant, and tomatoes in overlapping layers. Alternating the colors as you layer will result in an even more visually appealing Ratatouille.
Step 7
Drizzle about 2 Tbsp of olive oil evenly over the vegetables. Olive oil enhances the vegetables’ flavors and helps them cook to a tender, moist consistency.
Step 8
Preheat your air fryer to 180°C (350°F) and bake the Ratatouille for about 15 minutes. The vegetables will become tender, and the air fryer will impart a wonderful roasted flavor.
Step 9
Optionally, add a few Korean chili peppers (Ggwari-gochu) on top before baking for an extra touch of spicy flavor. This dish is simple to make, yet the harmonious blend of colorful vegetables creates a visually stunning result. Highly recommended for your next home party!
