Salmon Steak Ingredients
- 200g fresh salmon fillet
Salmon Marinade & Seasoning
- Pinch of fine salt
- Pinch of freshly ground black pepper
- 1 Tbsp cooking wine (or white wine)
- 1 Tbsp extra virgin olive oil
Salad & Garnish
- 2 cups baby greens
- 1/4 red bell pepper
- A few capers
- 2 Tbsp horseradish sauce
- 2 slices of Hallabong orange (or regular orange) for garnish
Zesty Olive Oil Dressing
- 2.5 Tbsp finely minced onion
- 1 tsp sugar
- 1/2 tsp fine salt
- 2 tsp fresh lemon juice
- 1/2 tsp soy sauce (for soup)
- 2 Tbsp extra virgin olive oil

Cooking Instructions
Step 1
First, let’s prepare the marinade for our salmon steak to enhance its flavor. Gently pat the salmon fillet dry with paper towels. Then, sprinkle both sides evenly with salt and pepper. Next, brush 1 tablespoon of cooking wine all over the salmon; this helps to eliminate any fishy odors. (If you have white wine, you can use that instead of cooking wine!) Finally, rub 1 tablespoon of olive oil onto the surface of the salmon and let it marinate for 20 minutes. This step will make the salmon incredibly tender and moist.
Step 2
Now, it’s time to prepare a fresh salad. Wash and prepare 2 cups of baby greens. Finely dice the red bell pepper (after removing the seeds) into small cubes. This adds beautiful color and a pleasant texture when served alongside the salmon steak. (If you don’t have bell peppers, halved cherry tomatoes also work wonderfully!)

To prepare the baby greens, fill a bowl with cold water, place a colander inside, and put the greens in the colander. Then, carefully lift the colander to drain the water. This method prevents the delicate baby greens from becoming mushy and keeps them crisp. If you try to pick them up by hand, the leaves might get damaged. Ensure the greens are well-drained so the dressing adheres nicely.
Step 4
Let’s make a zesty dressing for the baby greens! In a small bowl, combine 2.5 tablespoons of finely minced onion, 1 teaspoon of sugar, 1/2 teaspoon of fine salt, 2 teaspoons of fresh lemon juice, and 1/2 teaspoon of soy sauce (for soup). Whisk until all ingredients are well mixed. Finally, slowly pour in 2 tablespoons of extra virgin olive oil while whisking gently with a whisk to emulsify. Your delicious dressing is ready!

Now, for the star of the show: searing the salmon steak! Heat 1 tablespoon of olive oil and 1 piece of butter in a pan over medium heat until the butter is melted. Carefully place the marinated salmon into the hot pan. Instead of high heat, use medium heat and sear each side for about 1 minute until beautifully golden brown. The key is to achieve a nice, golden crust.
Step 6
Once the salmon is golden brown on both sides, reduce the heat to low. Cover the pan with a lid and continue to cook for about 5 more minutes. Cooking with the lid on over low heat allows the heat to penetrate evenly, ensuring the inside is perfectly cooked while the exterior remains wonderfully crisp.
