Your Go-To Recipe for Delicious Homemade Omurice

Do you love omurice? I’ve always found it a bit puzzling why people order it when dining out, and I suspect it’s because I make it so deliciously! This is one of my family’s absolute favorite dishes, and I’m excited for you to try it too. Give this recipe a go, and you might find your own family’s new favorite meal!

Fried Rice Ingredients
  • 4 large eggs
  • 2 bowls of cooked rice
  • 1 handful of finely diced carrots (approx. 30g)
  • 1 handful of finely chopped green onions (approx. 30g)
  • 100g canned ham, diced small
  • 1/4 onion, finely minced
  • 2 Tbsp ketchup
  • A pinch of black pepper
  • 1 pinch of salt

Omurice Sauce
  • 1 Tbsp oligosaccharide
  • 1 Tbsp oyster sauce
  • 3 Tbsp ketchup
  • 6 Tbsp tonkatsu sauce
  • 1/2 cup water (approx. 100ml)

Cooking Instructions

Step 1

First, finely dice the green onions and carrots. Aim for about 1 handful of each. Heat a little cooking oil in a spacious pan over medium heat. Add the diced green onions and carrots and stir-fry until fragrant, releasing the aroma from the green onions.

Step 2

Dice the canned ham into small cubes (about 1cm) and finely mince the 1/4 onion. Add these to the pan with the sautéed vegetables and continue to cook. Cook until the ham is lightly browned and the onions are translucent for a richer flavor.

Step 3

Once the vegetables are well sautéed, stir in 2 tablespoons of ketchup. Season with a pinch of black pepper and a pinch of salt. Continue to stir-fry until the ketchup is evenly coating all the ingredients.

Step 4

Stir and cook for another 1-2 minutes, ensuring the ketchup coats everything evenly. Be mindful of the heat to prevent burning. These sautéed ingredients will form the base of your delicious fried rice.

Step 5

Divide the fried rice into two portions. Pack each portion firmly into a small rice bowl, pressing down well. This ensures the rice holds its shape when inverted. Carefully flip the filled bowls onto serving plates.

Step 6

Voilà! You have your perfectly shaped rice mounds. The rice is now ready. All that’s left is to prepare the tender egg blanket and the flavorful sauce.

Step 7

In a bowl, whisk together 4 eggs until well combined. Heat a generous amount of cooking oil in a non-stick pan over medium-low heat. Pour in the beaten eggs. As the edges begin to set, use chopsticks or a spatula to gently push the cooked egg from the outside towards the center, allowing the uncooked egg to flow underneath, creating a thin omelet. Be careful not to overcook, as it can become tough.

Step 8

Carefully slide the cooked egg omelet over the prepared rice mound on the plate. Gently adjust it to fully cover the rice, creating a beautiful egg blanket. Handle the egg gently to prevent tearing.

Step 9

Now, let’s make the special sauce that will elevate your omurice! In a small bowl, mix 1 Tbsp oligosaccharide, 1 Tbsp oyster sauce, 3 Tbsp ketchup, 6 Tbsp tonkatsu sauce, and 1/2 cup of water. Pour this mixture into a saucepan and bring to a simmer over medium heat. Let it gently thicken to your desired consistency, stirring occasionally to prevent sticking.

Step 10

Once the sauce has thickened slightly, generously drizzle it over the omurice on the plate. The rich sauce will complement the fluffy egg and savory rice.

Step 11

Finally, for a professional touch, sprinkle a little parsley flakes over the center of the omurice. Your gorgeous omurice is now complete and ready to be enjoyed!
