Ingredients- 1 measuring cup mussel meat
- 1/4 red bell pepper
- 1/4 onion
- 2 garlic scapes
- 2 pinches salt
- 1 pinch black pepper
- 1/2 measuring cup mozzarella cheese

First, let’s start by preparing the mussels. Locate the tough ‘beard’ on the side of each mussel and pull it firmly to remove it. Use the edge of a knife or a small brush to scrape off any debris attached to the shells. Finally, rinse them thoroughly under running water.

Place all the cleaned mussels into a pot. Add enough water to cover the mussels completely. Now, cover the pot and bring it to a boil.

Once the mussels are cooked, let them cool slightly. While still warm, carefully separate the mussel meat from the shells and set it aside in a bowl.

Now, let’s prepare the vegetables for the gratin. Finely chop 1/4 red bell pepper, 1/4 onion, and 2 garlic scapes. Don’t feel restricted to these specific vegetables; feel free to use any leftover vegetables you have in your refrigerator to enhance the flavor!
