Cooking Instructions
Step 1
First, prepare 2L (about 10 cups) of dashi broth, made with anchovies and kelp. A clear and rich broth is the key to the deliciousness of Millefeuille Nabe.
Step 2
Add 3 Tbsp of soy sauce for soup to the prepared broth to enhance its savory flavor. Once it begins to boil, reduce the heat to medium-low. While the broth simmers, we’ll make the dipping sauce.
Step 3
Now it’s time to make the special Millefeuille Nabe dipping sauce. In a bowl, add 4 Tbsp of soy sauce.
Step 4
Next, add 2 Tbsp of vinegar. The sourness helps to balance the richness of the dish, creating a well-rounded sauce.
Step 5
Add 2 Tbsp of sake. The alcohol will evaporate, leaving behind a clean flavor that enhances the overall taste without any unpleasant odors.
Step 6
Add 2 Tbsp of plum extract for a hint of sweetness and a fragrant aroma. This will make the sauce even more complex and delightful.
Step 7
Stir in 1 Tbsp of sugar to adjust the sweetness and achieve a perfect balance.
Step 8
Finally, add 1 Tbsp of hot mustard for a pleasant piquant note. Whisk or stir everything together until well combined to complete your delicious dipping sauce.
Step 9
Now it’s time to prepare the star of the Millefeuille Nabe: the layered ingredients. Lay out one large leaf of Napa cabbage flat.
Step 10
Layer 2 perilla leaves on top of the cabbage. The aromatic perilla leaves will beautifully complement the flavors of the cabbage and beef.
Step 11
Generously arrange the sliced beef for shabu-shabu (such as from the hind leg) on top of the perilla leaves. The thin slices cook quickly and offer a wonderfully tender texture.
Step 12
Stack the ingredients in the order of cabbage, then perilla leaves, then beef. Once stacked, cut them into manageable lengths, about 5-7cm, to fit the height of your pot. This makes them easy to arrange upright in the pot and convenient to eat.
Step 13
Arrange the layered millefeuille pieces upright around the edges of the pot, creating a beautiful presentation. In the center, artfully arrange the prepared shiitake mushrooms, enoki mushrooms, and oyster mushrooms. These mushrooms add not only visual appeal but also a variety of textures and contribute to a richer broth flavor.
Step 14
Pour the warm broth over the ingredients and let it simmer until everything is cooked through. Enjoy this steaming bowl of Millefeuille Nabe to forget the chilly weather and savor a warm, delightful meal! Enjoy your meal today! ^^
