Omurice & Fried Rice Ingredients

  • 1/2 onion
  • 1/2 carrot
  • 1/2 zucchini
  • 1/2 green onion
  • 1 small can Spam
  • 5-6 eggs
  • 1 Tbsp milk

Special Omurice Sauce

  • 5 Tbsp Tonkatsu sauce
  • 3 Tbsp Ketchup
  • 1 Tbsp Oyster sauce
  • 2 Tbsp Oligodang (corn syrup)
  • 0.5 Tbsp Butter
  • 2 Tbsp Milk (optional)

Cooking Instructions

Step 1

First, let’s make the special sauce that will elevate your Omurice. In a small saucepan, combine 5 Tbsp Tonkatsu sauce, 3 Tbsp Ketchup, 1 Tbsp Oyster sauce, 2 Tbsp Oligodang, and 0.5 Tbsp Butter. Heat gently over low heat, stirring occasionally, until the butter is melted and the sauce is slightly thickened. For an even smoother sauce, you can add 2 Tbsp of milk (optional). Once the sauce reaches a nice consistency, set it aside.

Step 1

Step 2

Now, prepare the ingredients for the fried rice. Finely dice the onion, carrot, zucchini, and Spam into small, bite-sized pieces that are easy for children to eat. Keep these chopped ingredients together. Finely chop the green onion separately, as it will be used to create fragrant green onion oil.

Step 2

Step 3

Prepare the eggs for the omelet. In a bowl, crack 5-6 eggs. Add a pinch of salt to season. Stir in 1 Tbsp of milk to make the omelet extra tender and moist. Whisk the eggs until well combined and smooth.

Step 3

Step 4

Let’s start making the fried rice. Heat a generous amount of cooking oil in a wok or a deep skillet over low heat. Add the chopped green onions and cook slowly until fragrant, allowing them to release their sweet aroma and create flavorful green onion oil. Be careful not to burn them.

Step 4

Step 5

Once the green onion oil is fragrant, add the diced carrots. Sprinkle a pinch of salt and sauté until the carrots are slightly softened but still have a bit of a crunch.

Step 5

Step 6

When the carrots are partially cooked, add the diced onion, zucchini, and Spam to the skillet. Stir-fry over medium-high heat until the vegetables are tender-crisp and the Spam is lightly browned.

Step 6

Step 7

When the vegetables are almost cooked through, add the cooked rice to the skillet. Season with salt to taste. Break up any clumps of rice with your spatula and stir-fry until everything is well combined and heated through. Aim for fluffy fried rice.

Step 7

Step 8

To finish the fried rice, drizzle in a swirl of sesame oil and stir gently. This adds a wonderful aroma and gloss to the fried rice. Your delicious fried rice is now ready!

Step 8

Step 9

Carefully spoon the prepared fried rice onto a plate. You can shape it into a mound or use a bowl to create a neat dome shape for a more appealing presentation.

Step 9

Step 10

Now, let’s make the soft omelet to top the fried rice. Heat a non-stick skillet over low heat. Pour a thin layer of the beaten egg mixture into the pan and swirl to create a thin, even omelet. Cook gently until mostly set.

Step 10

Step 11

Carefully flip the omelet to cook the other side briefly, aiming for a tender, slightly moist texture rather than a crispy one. Gently slide the cooked omelet over the mound of fried rice, letting it drape over like a soft blanket.

Step 11

Step 12

Drizzle the homemade Omurice sauce generously over the omelet. Your beautiful and delicious Omurice is now complete!

Step 12

Step 13

Making Omurice from scratch, including the sauce, after so long made our whole family devour every last bite! If you’re looking for a way to transform ordinary fried rice into something special, why not try making Omurice? 🙂
