Main Ingredients- 1/2 medium ripe tomato
- 1 ball fresh mozzarella cheese
- 10g fresh basil (about a handful)
Basil Pesto Ingredients- 2 cloves garlic
- 7 pine nuts
- 7 Tbsp extra virgin olive oil
- Pinch of salt
- Pinch of black pepper

Cooking Instructions
Step 1
Wash the tomato thoroughly. Remove the stem from 1/2 of the tomato and cut it into 4 wedges. Slice them into bite-sized pieces, not too thin, to maintain a good texture.
Step 2
Gently pat the fresh mozzarella cheese dry with a paper towel. Slice it into 3 pieces. It’s important to keep the cheese somewhat substantial, so avoid cutting it too small.
Step 3
Now, let’s make the fragrant basil pesto. In a blender or food processor, combine the 10g of fresh basil leaves, 2 peeled garlic cloves, 7 pine nuts, and 7 Tbsp of extra virgin olive oil. Add a pinch of salt and pepper. Blend until all ingredients are smooth and well combined. If the pesto seems too thick, you can add a little more olive oil. Set the pesto aside.
Step 4
Arrange the sliced tomatoes and mozzarella cheese on a serving plate, overlapping them attractively. Drizzle 1 Tbsp of balsamic vinegar around the plate. Finally, use a spoon to dollop the prepared basil pesto onto the tomatoes and cheese. This completes your beautiful Caprese salad! You can also add a little extra drizzle of extra virgin olive oil if desired.
