Ingredients- 25g eggplant, thinly sliced
- Beef (leftover seasoned meat from LA Galbi, frozen), a small amount
- Pinch of white pepper
- 20g onion, finely julienned
- A little cooking oil
- 2 slices of bread
- A little butter or margarine
- Tomato sauce, as needed
Cooking Instructions
Step 1
Prepare the beef by using leftover, frozen, and seasoned meat that was originally attached to the bones of LA Galbi. This collected meat is excellent for fried rice or as a filling for toast. Lightly season the prepared beef with white pepper and cook it. (Tip: Thinly slicing and cooking the meat makes it tender and easier to use.)
Step 2
Using a vegetable peeler, thinly slice the fresh eggplant, almost like peeling the skin. Thin slices will ensure it cooks tenderly and is easy to arrange on the toast.
Step 3
Finely julienne about 20g of onion. The thinner the strips, the better they will caramelize and release their natural sweetness when sautéed.
Step 4
Heat a pan with a little cooking oil. Add the julienned onions (without salt) and sauté until they turn translucent. Sautéing them thoroughly will bring out their inherent sweetness.

Add the thinly sliced eggplant to the same pan and sauté until it becomes tender. (Tip: Eggplant absorbs oil readily, so be mindful of the amount of cooking oil you use.)

Melt a little butter or margarine in a clean pan and toast the bread slices until golden brown on both sides. Crispy toast provides a wonderful base for your brunch.

Spread a generous layer of appetizing tomato sauce onto the toasted bread. Then, arrange the sautéed onions attractively on top of the sauce.
