Rich Vegetable Curry

  • 100g Store-bought curry roux or curry powder
  • 2 medium Potatoes
  • 1/2 medium Carrot
  • 1.5 medium Onions
  • Olive oil, for sautéing
  • Steamed white rice, as needed

Soft Sunny-Side-Up Egg Crepe

  • 4 Eggs
  • 2 Tbsp Milk (can substitute with heavy cream for extra richness)
  • Pinch of salt
  • Pinch of dried parsley (optional, for garnish)

Cooking Instructions

Step 1

Prepare the vegetables for the curry. Wash and peel the potatoes, carrot, and onions. Dice them into uniform approximately 1cm cubes. (For a heartier curry, you can add ground beef or pork at this stage.)

Step 1

Step 2

Heat a generous amount of olive oil in a deep pan or wok over medium heat. Add the diced onions and sauté until they become translucent, which helps to bring out their natural sweetness and deepens the curry’s flavor.

Step 2

Step 3

Once the onions are softened, add the diced potatoes and carrots to the pan. Continue to sauté for about 5 minutes, until the vegetables are slightly tender. Sautéing the vegetables beforehand will enhance their texture and enrich the curry’s overall taste.

Step 3

Step 4

When the vegetables are about 80% cooked, pour in 800ml of warm water (using warm water helps the vegetables cook evenly and release their flavors). Bring to a boil over high heat, then reduce to medium-low and simmer for 10-15 minutes, or until the vegetables are completely tender. Simmering the sautéed vegetables in water creates a delicious base for the curry.

Step 4

Step 5

With the heat on low, gradually add the curry powder (or roux) to the pot, stirring constantly to dissolve any lumps and ensure a smooth mixture. It’s best to add it in 2-3 batches to prevent clumping.

Step 5

Step 6

Continue to cook, stirring occasionally, until the curry thickens to your desired consistency and all the ingredients are well combined. Let it simmer for a few more minutes to allow the flavors to meld. Your delicious vegetable curry is now complete. Turn off the heat and let it rest briefly.

Step 6

Step 7

Now, let’s prepare the soft egg crepe for the omurice. In a bowl, crack the 4 eggs. Use a whisk to gently beat them, ensuring the yolks and whites are thoroughly combined. It’s important to break down the chalazae (the white, rope-like strands) for a smoother texture. Stir in 2 tablespoons of milk, a pinch of salt, and the optional parsley for garnish. (Using heavy cream instead of milk will yield an even richer and creamier result.)

Step 7

Step 8

Heat a non-stick pan over low heat. Lightly grease the pan with a little olive oil using a paper towel. Pour the egg mixture into the pan, creating a thin layer. Using chopsticks or a skewer, gently swirl the eggs from the center outwards, as if making scrambled eggs, until they are just set but still moist on top. Aim for a soft, slightly undercooked finish – this will make it easier to fold and prevent tearing.

Step 8

Step 9

Neatly mold the warm steamed white rice into a dome shape in your serving dish. Press the rice gently into the dish to help it hold its form and create a beautiful presentation.

Step 9

Step 10

Carefully place the prepared semi-cooked egg crepe over the rice, gently covering it completely. Handle the egg crepe with care to avoid tearing.

Step 10

Step 11

Finally, ladle the warm vegetable curry generously over the egg crepe and rice. Allow some of the curry to flow down the sides for an appealing presentation. Sprinkle with a little parsley if desired. Your elegant Curry Omurice for a special anniversary is now ready to be enjoyed!
