Main Ingredients
  • 1/2 Cucumber
  • 1 Egg
  • 1 Shiitake Mushroom
  • 30g Minced Beef
  • 1 segment Scallion
  • 1 clove Garlic, minced

Seasoning & Stir-fry Ingredients
  • 1 tsp Soy Sauce
  • 1/2 tsp Sugar
  • A pinch of Sesame Oil
  • A pinch of Black Pepper
  • A pinch of Toasted Sesame Seeds
  • A pinch of Salt (for salting cucumber)
  • 1 Tbsp Vinegar (for sweet & sour dressing)

Cooking Instructions

Step 1

Wash the cucumber thoroughly. Cut it into two 4cm long pieces, then halve each piece lengthwise. Next, make diagonal slits about 0.5cm apart. These slits will allow you to easily fill the cucumber. Be careful not to cut all the way through.

Step 2

Remove the stems from the shiitake mushroom and thinly slice it to about 0.2cm thickness. Similarly, slice the beef to about 0.1cm thickness. Finely chop the scallion and mince the garlic.

Step 3

Separate the egg yolk and white. Beat each separately with a pinch of salt. Heat a lightly oiled frying pan over low heat and cook thin omelets (jidan) from the yolk and white. Once cooled, thinly julienne them or cut them to fit the cucumber size.

Step 4

Stir-fry the sliced beef and shiitake mushrooms separately in a pan with a little oil over low heat. Season the beef with 1 tsp soy sauce, 1/2 tsp sugar, a pinch of black pepper, and a little minced garlic. Season the shiitake mushrooms with a pinch of sesame oil and a pinch of salt.

Step 5

Carefully fill the slits in the prepared cucumber pieces with the julienned egg yolk, followed by the stir-fried shiitake mushrooms and beef, and finally the julienned egg white. Avoid overstuffing, as this can cause the rolls to lose their shape.

Step 6

In a small saucepan, combine 1 Tbsp vinegar, a little sugar, and a pinch of salt to make the sweet and sour dressing. Gently heat until the sugar and salt are fully dissolved, then remove from heat. Lightly drizzle the dressing over the assembled Oi-seon rolls. Garnish with toasted sesame seeds for a beautiful finish. Your elegant Oi-seon is now ready to serve!
