  • 2 thick strips of pork belly (approx. 600-800g)
  • Pinch of salt (for seasoning)
  • Pinch of black pepper (for seasoning)
  • 5 cloves of garlic
  • 1 sprig of fresh rosemary (optional)

Special Braising Sauce for Pork Belly

  • 2 measuring cups of red wine (approx. 400ml)
  • 2 Tbsp sugar (white or brown)
  • Pinch of black pepper (for sauce)
  • 1 piece of unsalted butter (approx. 15g)

Ingredients for Cheesy Sweet Potatoes

  • 400g sweet potatoes
  • 1 measuring cup of milk (approx. 200ml)
  • 1/4 measuring cup of heavy cream (approx. 50ml)
  • 2 measuring cups of shredded mozzarella or pizza cheese (approx. 200g)
  • Pinch of salt (to taste)
  • Pinch of black pepper (for flavor)
  • 1 piece of unsalted butter (approx. 15g)
  • 1 measuring cup of water (for steaming sweet potatoes, approx. 200ml)

Cooking Instructions

Step 1

Start by preparing the garlic for the braised pork belly. Lightly crush the garlic cloves with the side of a knife. This helps release their aromatic oils, infusing the braising liquid with a rich flavor.

Now, let’s use the multicooker. Place the air fryer basket inside the multicooker pot. Add the pork belly strips and season them generously on all sides with salt and pepper. Ensuring an even seasoning is key for maximum flavor.

Utilize the multicooker’s air fryer function. Set the temperature to 180°C (356°F) and cook for about 20 minutes. This step sears the pork belly, creating a delicious golden-brown exterior and locking in the juices.

Remove the air fryer basket. Add the seared pork belly, crushed garlic, rosemary sprig, and all the braising sauce ingredients (red wine, sugar, pepper, and butter) into the multicooker pot. Select the ‘Low Pressure’ mode and cook for 10 minutes. Once done, your tender braised pork belly is ready! Slice it and serve generously.

Next, let’s make the creamy cheesy sweet potatoes. Place the washed sweet potatoes into the multicooker pot and add 1 measuring cup (200ml) of water. Select the ‘Steam’ function and cook for 10 minutes until the sweet potatoes are tender.

Carefully remove the hot, steamed sweet potatoes and peel off their skins while they are still warm. Place the peeled sweet potatoes into a bowl and mash them thoroughly with a fork or masher until smooth and lump-free. For an extra smooth texture, consider passing them through a sieve.

Return the mashed sweet potatoes to the multicooker pot. Add the milk, heavy cream, and the piece of butter. Set the multicooker to ‘Sear/Sauté’ mode on a ‘Low’ heat setting. Stir gently and cook until the mixture becomes creamy and well combined.
