A Perfect Festive Dish for Family Gatherings: Vegetable and Beef Rolls
Inspired by a famous local restaurant known for its exquisite meat rolls, I’ve recreated this special dish for my family to enjoy during the year-end holidays. It’s a delightful combination of tender beef and crisp vegetables, perfect for making your holiday meals even more memorable.
Main Ingredients- 300g thinly sliced beef for shabu-shabu
- 50g fresh water parsley (use stems only)
- 1/2 pack enoki mushrooms
- 1/2 pack oyster mushrooms
Tangy Mustard Sauce- 1 Tbsp prepared mustard
- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 1/2 Tbsp sugar
- 1 Tbsp mirin (sweet rice wine)
- Pinch of salt
- Pinch of black pepper

Cooking Instructions
Step 1
Start by preparing the oyster mushrooms. Gently separate them into individual strands from the base. Make sure they are loosened and not clumped together.

Next, prepare the enoki mushrooms. Trim off the tough base, then carefully separate the strands. Ensure they are loose and ready to be used.

For the water parsley, you’ll only be using the tender stems. Remove the leafy parts. Cut the stems into pieces about 7-8 cm long, slightly longer than the width of your beef slices. It’s crucial to wash the water parsley very thoroughly under running water to remove any dirt or potential impurities, like leeches, ensuring it’s perfectly clean.

Now, let’s make the delicious mustard sauce. In a bowl, combine the prepared mustard, soy sauce, vinegar, sugar, and mirin. Whisk everything together until well blended. You can add a pinch of salt and pepper to taste for a more complex flavor profile.

To prepare the beef, lay out a sheet of kitchen towel on your work surface. Place the beef slices on top, and cover them with another sheet of kitchen towel. Gently press down to absorb any excess blood. You’ll notice quite a bit of blood comes out; blotting it thoroughly is key to preventing any unwanted meatiness.

Once the beef is patted dry, season it lightly with salt and black pepper. This simple seasoning enhances the natural flavor of the beef.

It’s time to assemble the rolls! Lay one slice of seasoned beef flat. Arrange a suitable amount of oyster mushrooms, enoki mushrooms, and water parsley stems in the center. Then, carefully roll the beef around the vegetables, just like making a sushi roll, ensuring it’s firm but not too tight. It’s surprisingly easy!

Finally, heat a non-stick frying pan over medium-low heat without adding any oil. Place the rolled beef rolls seam-side down and cook until they are golden brown on all sides.
