A Sophisticated Meal at Home: Salmon Rice Bowl Recipe
This salmon rice bowl has become a ‘soul food’ for my family! Even my picky seven-year-old devours it in under 10 minutes when served a generous portion. On evenings when side dishes are scarce, why not whip up a quick and special meal with a pack of fresh salmon from the local market? It’s simple yet impressive enough for hosting guests.
For the Rice- 1 cup rice
- 1 piece kombu (approx. 5cm x 5cm)
- 1 cup water

Cooking Instructions
Step 1
First, let’s cook some delicious rice. Rinse 1 cup of rice thoroughly and let it soak in water for about 30 minutes. After soaking, add 1 cup of water and a piece of kombu to the rice cooker, and cook fluffy rice suitable for donburi. While the rice is cooking, preparing the other ingredients will save you time.
Step 2
To enhance the flavor of the fresh salmon, gently pat its surface dry with paper towels or a clean cloth to remove excess moisture. This helps to reduce any fishy odor and results in a cleaner taste. About 10 minutes should be sufficient.
Step 3
Once the salmon is dry, slice it into approximately 0.7cm thick pieces, holding your knife vertically. Slicing carefully this way will help create beautiful pieces. Wrap the sliced salmon tightly with plastic wrap and place it in the freezer for about 10 minutes to chill. This slight freezing makes the salmon firmer and gives it a wonderfully fresh, slightly icy texture.
Step 4
Thinly slice the onion and soak it in cold water for about 5 minutes. This process removes the sharp, pungent flavor of the onion, allowing its sweetness to blend harmoniously with the salmon for a milder taste.
Step 5
If you’re using avocado, it will add a creamy richness. Remove the pit, peel it, and slice it into bite-sized pieces. Sliced avocado also adds a beautiful splash of color when arranged on top of the rice.
Step 6
Carefully spoon the perfectly cooked rice into a serving bowl. Artfully arrange the fresh salmon slices, crisp onion, creamy avocado, and fresh sprouts on top of the rice according to your preference. Create your own personalized salmon donburi!

Finally, prepare the donburi sauce and wasabi if you like it spicy. The sauce will deepen the salmon’s flavor, while wasabi cuts through any richness with its sharp kick, creating a perfect pairing.
Step 8
It’s time to make the donburi sauce. Combine 4 Tbsp soy sauce, 8 Tbsp water, 1.5 Tbsp vinegar, 2 Tbsp sugar, and 1 Tbsp minced garlic in a saucepan. Heat over medium heat until it just begins to boil, then immediately remove from heat and let it cool completely. This sauce can be stored in the refrigerator and drizzled over your salmon donburi.
