Cooking Instructions
Step 1
First, combine the beef marinade ingredients (1 Tbsp soy sauce, 1 Tbsp plum extract, 1 Tbsp cooking sake, 1/3 Tbsp minced garlic, a pinch of black pepper) in a bowl and mix well. Add the beef and gently massage to coat. Let it marinate for about 15-20 minutes.
Step 2
Rinse the rice (white rice, or the 3:1 mixture of brown and glutinous brown rice) and soak it for about 30 minutes. Drain the soaked rice and place it in the rice cooker pot. Evenly spread the prepared bean sprouts over the rice. (Using only white rice is also perfectly fine.)
Step 3
Drain the marinade liquid from the marinated beef, and place the beef pieces on top of the bean sprouts. Add the kelp. Add slightly less water than you normally would for cooking rice, as the ingredients will release moisture. (This prevents the rice from becoming too mushy.)
Step 4
Close the rice cooker lid and select the ‘cook’ or ‘white rice’ setting. (If you don’t have a rice cooker, you can cook this in a regular pot or a pressure cooker. In that case, you can lightly sauté the rice before adding the bean sprouts and beef.)
Step 5
While the rice is cooking, prepare the seasoned soy sauce dressing. In a small bowl, combine 3 Tbsp soy sauce, 1/2 Tbsp gochugaru, 1 Tbsp plum extract, 1/2 Tbsp oligodang, 1 Tbsp chopped chives (or green onion), 1 Tbsp sesame oil, and 1/2 Tbsp toasted sesame seeds. Mix everything thoroughly. Taste the dressing and adjust the seasoning if needed – you can add a little water to dilute it or a bit more sweetener if it’s too salty for your preference.
Step 6
Once the rice is cooked, gently mix the beef and bean sprouts with the rice. Serve the hot rice in bowls and drizzle generously with the prepared seasoned soy sauce dressing. Mix well before eating and enjoy your delicious, easy meal!
