First, remove any dirty outer leaves or wilted parts from the scallions. Use only the fresh parts. Cut the scallions into manageable lengths of about 10-15 cm. If they are too long, it can be difficult to slice them.

Now, carefully slice the part of the scallion where the leaves are attached lengthwise, about halfway through. Make a cut only into the leafy part, leaving the root end intact. This helps you slice thinly along the grain of the scallion.

Gently spread open the halved leafy section and then roll it up tightly. Rolling it like you would a sushi roll will help keep the shape intact when you slice. It’s now ready for fine shredding.
