Marinade Ingredients
  • 400ml Water
  • 30g Sugar (adjust to taste)
  • 50ml Mirin (or cooking sake)
  • 100ml Soy Sauce
  • 50ml Tsuyu (or adjust soy sauce quantity if you don’t have tsuyu; seasoned dashi soy sauce can also work)

Cooking Instructions

Step 1

First, let’s prepare the delicious marinade. In a pot, combine 400ml water, 30g sugar, 50ml mirin, 100ml soy sauce, and 50ml tsuyu. Stir well over medium heat. Once it starts to simmer around the edges, immediately turn off the heat and let it cool completely. This process deepens the flavor of the marinade and removes any raw alcohol smell.

Step 2

Now, let’s prepare the salmon. Rinse the salmon fillet, pat it dry, and then slice it into approximately 1.5 to 2cm thick pieces for easy eating. Slicing too thinly can prevent the marinade from properly absorbing, while slices that are too thick might take longer to marinate through. Slice the half onion coarsely and spread it on the bottom of your storage container. Arrange the salmon slices on top, ensuring they don’t overlap too much.

Step 3

Pour the completely cooled marinade over the salmon, making sure it’s submerged. If you like a bit of heat, finely chop 1-2 Korean Cheongyang peppers and add them now. Cover the container tightly with a lid or plastic wrap, and refrigerate for at least 2 hours. For an even richer flavor, you can let it marinate overnight.
