  • 2 Eggs
  • 1/2 Onion
  • 1 handful of Mozzarella cheese
  • 1 slice of Processed cheese (optional, for extra flavor!)
  • 1 knob of Butter (approx. 10g)

Let’s gather the ingredients for our delightful tortilla sandwich! Feel free to adjust quantities to your liking. I find anything made with tortillas turns out delicious! 😊 You’ll need 2 eggs, half an onion, and some mozzarella cheese for a wonderful texture. Although not in the photo, adding a slice of processed cheese will enhance the rich and savory flavor. Don’t forget a knob of butter!

The onion will add a pleasant crunch and sweetness to the sandwich. After washing the onion half, thinly slice it into fine shreds. Slicing them thinly will help them blend well with the eggs.

Now, let’s start making the sandwich! Heat a frying pan over medium heat. Add the knob of butter and let it melt, spreading it evenly across the pan. Once the butter is melted, crack in the 2 eggs and scramble them lightly. As the eggs begin to cook, evenly distribute the thinly sliced onions over them. Sprinkle a generous amount of mozzarella cheese on top. If you’re using processed cheese, add it now as well. The cheese will melt beautifully, adding a delicious aroma.

Carefully place one tortilla over the cooked eggs, onions, and cheese in the frying pan. It’s best to reduce the heat to low at this stage. Let it cook for a short while until the tortilla is warm and the filling adheres well. Then, gently flip the tortilla over, making sure the filling doesn’t spill out. Cooking the other side until lightly golden will make it even tastier.

Once your tortilla sandwich is ready, cut it into manageable pieces. You can drizzle ketchup over it, or if you like a bit of spice, add a dash of hot sauce.
