How to Make Flavorful Minestrone Soup at Home
This recipe shows you how to easily and quickly make authentic Italian Minestrone soup at home using tomato juice. The rich flavors of various vegetables and bacon will warm your body and soul on a cold day.
Main Ingredients- 1 cup tomato juice
- 1/2 onion
- 1 potato
- 1/3 carrot
- 4 strips bacon
Cooking Instructions
Step 1
First, prepare the vegetables. Peel the 1/3 carrot, 1 potato, and 1/2 onion. Then, cut them into bite-sized hexagonal shapes. It’s good to cut the potatoes and carrots into similar sizes to ensure even cooking.
Step 2
Pour 2 cups of water into a deep pot and add all the prepared vegetables (carrot, potato, onion). Bring to a boil over high heat and cook for about 10-15 minutes, or until the vegetables are tender. They should be soft enough to be easily pierced with a fork.
Step 3
While the vegetables are cooking, prepare the bacon. Cut the 4 strips of bacon into pieces similar in size to the vegetables. Once the vegetables are about halfway cooked, add the chopped bacon to the pot and continue to simmer. The flavor from the bacon will add depth to the soup.
Step 4
When the vegetables and bacon are fully cooked, pour in 1 cup of tomato juice and stir well. For a richer tomato flavor, you can add 2 tablespoons of ketchup, if desired. Finally, season with a pinch of black pepper and salt to taste. Simmer for another 5 minutes to allow the flavors to meld together. Your delicious Minestrone soup is ready! Serve hot.
