Main Ingredients

  • Rice cakes (mill tteok) 150g (1 serving)
  • Enoki mushrooms 50g
  • Cheongyang chili pepper 1/2 (optional)

Sweet & Savory Soy Sauce

  • Soy sauce 2 Tbsp
  • Oyster sauce 1 tsp
  • Sugar 2 tsp
  • Water 100ml
  • Rice syrup (jocheong) 1 Tbsp (for a sticky texture)
  • Black sesame seeds, a pinch
  • Sesame oil, a drizzle

Cooking Instructions

Step 1

First, let’s prepare the main ingredients. Soak 150g of rice cakes in cold water for about 10 minutes until softened. Trim the base of the enoki mushrooms and separate them into bite-sized pieces.

Step 1

Step 2

Now, let’s make the star of the show: the sweet and savory soy sauce! In a bowl, combine 100ml of water, 2 Tbsp soy sauce, 1 tsp oyster sauce, and 2 tsp sugar. Stir well until the sugar is completely dissolved. The oyster sauce adds a wonderful depth of flavor.

Step 2

Step 3

Pour the prepared soy sauce mixture into a wide pan or pot. Add the enoki mushrooms first. They’ll absorb the sauce beautifully, becoming even more delicious.

Step 3

Step 4

Once the soy sauce mixture starts to boil, add the soaked rice cakes. Cook until the rice cakes are tender, stirring occasionally to prevent them from sticking together.

Step 4

Step 5

When the rice cakes are almost cooked, stir in 1 Tbsp of rice syrup (jocheong). This isn’t just for sweetness; it helps create a wonderfully thick and glossy sauce. Mix it in well.

Step 5

Step 6

If you’re making this for children, you can skip this step. However, for a touch of mild spiciness, finely chop half a Cheongyang chili pepper and add it to the pan. It adds a subtle warmth that enhances the overall flavor profile.

Step 6

Step 7

Finally, let everything simmer together for just a little longer to allow the flavors to meld. Just before turning off the heat, drizzle with a pinch of black sesame seeds and a touch of sesame oil for an extra nutty aroma. Your delicious soy sauce tteokbokki is ready to enjoy!
