  • 1 Onion (medium)
  • 1 can Spam (200g)
  • 2 Eggs
  • 2 bowls Cooked Rice (warm)
  • 2 Tbsp Chopped Scallions (for garnish)

Flavorful Sauce

  • 1 Tbsp Sugar
  • 1 cup Water (200ml)
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Katsuobushi Broth Base (or Tsuyu)
  • 1 Tbsp Sesame Oil
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, let’s prepare the ingredients. Peel and wash the onion, then slice it thinly into strips. Open the Spam can, drain, and cut it into about 10 bite-sized pieces, approximately 0.7-1cm thick.

Heat a skillet over medium heat. Add the sliced Spam and cook until golden brown on both sides. You can gently blot away excess oil with a paper towel for a cleaner taste.

In a wide pot or pan, add 1 tablespoon of cooking oil and heat over medium heat. Add the sliced onions and sauté for about 2-3 minutes until they become translucent and slightly softened, which brings out their natural sweetness.

Once the onions are nicely softened, it’s time to make the delicious sauce for the rice. Add 1 cup of water, 1 tablespoon of sugar, 2 tablespoons of Katsuobushi broth base (or Tsuyu), 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, and a pinch of black pepper to the pot. Stir well to combine. Bring to a boil over high heat, then reduce to medium-low and simmer for 1-2 minutes to allow the flavors to meld.

Arrange the browned Spam slices attractively over the sautéed onions. Pour the prepared sauce over the Spam and onions, ensuring they are partially submerged. Finally, carefully crack the two eggs over the top of the Spam and onions. Try not to break the yolks. As the egg whites begin to set, gently spread them for a neat appearance.

Cover the pot with a lid and reduce the heat to low. Cook until the eggs reach your desired level of doneness, preferably a soft-boiled consistency. This usually takes about 3-5 minutes. The key to a great Spam Donburi is a runny, luscious egg yolk! Turn off the heat and let it sit covered for another minute to finish cooking with residual heat.
