  • Rice, for 3 servings (approx. 2.5 cups)
  • 200g fresh bean sprouts
  • 1 handful dried shiitake mushrooms (or 2-3 fresh shiitake mushrooms)

Savory Dipping Sauce

  • 5 Tbsp soy sauce
  • 2 Tbsp sesame oil or perilla oil
  • 1 Tbsp red pepper flakes (gochugaru)
  • 0.5 Tbsp minced garlic (approx. 1/2 tsp)
  • 1 Tbsp toasted sesame seeds
  • 2 Tbsp water
  • A little chopped green onion (for garnish)

Cooking Instructions

First, rinse the bean sprouts thoroughly under running water and drain them well. If using dried shiitake mushrooms, soak them in warm water until softened, then finely chop them into bite-sized pieces. (If using fresh shiitake mushrooms, wash them and chop similarly. Dried shiitake mushrooms will provide a deeper flavor.)

Wash the rice and drain it in a colander. Place the rice in your rice cooker. Reduce the amount of water you’d normally use by about 10%, as the bean sprouts will release moisture, preventing the rice from becoming too watery. Add the prepared shiitake mushrooms on top of the rice and let it soak for about 10 minutes. This allows the mushroom’s aroma to infuse the rice, enhancing its flavor.

While the rice is soaking, generously spread the rinsed bean sprouts over the rice. Close the rice cooker lid and select the ‘regular cook’ setting. Be gentle when adding the bean sprouts to avoid crushing them.

While the rice is cooking, let’s prepare the savory dipping sauce. In a small bowl, combine all the sauce ingredients: soy sauce, sesame oil (or perilla oil), red pepper flakes, minced garlic, toasted sesame seeds, and 2 tablespoons of water. Mix well with a spoon. You can adjust the amount of water to your preference.
