  • 1/2 cup short-grain rice (or regular white rice)
  • 1 cup red beans
  • 4.5 cups water (approx. 810ml)
  • A little walnut, chopped (for garnish)
  • A little rice cake (e.g., tteokguk tteok, mochi)
  • Sugar, to taste
  • Salt, to taste

Cooking Instructions

You don’t always need glutinous rice for red bean porridge! Regular short-grain or even long-grain white rice works wonderfully and tastes delicious. If you happen to have glutinous rice, feel free to use it, but there’s no need to buy it specially. This recipe uses just 1/2 cup of regular rice and 1 cup of red beans. And guess what? You don’t even need to soak the red beans beforehand!

Let’s prepare the base for our delicious porridge. Grab your rice cooker or pressure cooker – this is where the magic happens without constant stirring! Rinse the rice and red beans thoroughly under cold water. Once clean, place them together in the rice cooker and select the ‘rice’ or ‘porridge’ setting (if available). If not, a standard cooking cycle will also work.

Simply set the rice cooker to ‘cook’ in the evening, and when you wake up in the morning, you’ll find perfectly cooked red bean rice! It’s incredibly convenient and requires minimal effort. Your red bean rice base is ready in a flash.

Now, transfer the cooked red bean rice into a pot. Add 2.5 cups (about 450ml) of water. Using an immersion blender (hand blender), blend the mixture. If you enjoy a bit of texture with discernible red bean pieces, blend briefly. For a super smooth and creamy porridge, blend until you reach your desired consistency.

If you’ve made more porridge than you plan to eat immediately, portion out what you need into a separate pot. Now it’s time to season. Add sugar and salt according to your preference. A tip: if you’re adding sweet rice cakes, you might want to use only a pinch of salt to balance the sweetness.

Place the pot with the porridge on the stove over low to medium heat. Stir gently and occasionally to prevent sticking. As soon as the porridge begins to gently bubble and come to a simmer, it’s time to add your rice cakes.

Almost any type of Korean rice cake will be delicious in your porridge! Those leftover frozen rice cakes are perfect for this. Whether it’s tteokguk tteok (soup rice cakes), small mochi pieces, or even slices of jeolpyeon, adding them will enhance the flavor and texture of your red bean porridge.

Finally, garnish your warm red bean porridge with the softened rice cakes and some crushed walnuts for a delightful crunch and nutty flavor. Your beautiful and delicious Patjuk is ready!
