Main Ingredients- 600g Pork Shoulder (Bulgogi cut)
- 200g Store-bought Pork Galbi Sauce
- 1/2 Onion
- 10 Perilla Leaves (Kkaennip)
- 1 Green Onion (Scallion)
- 1 King Oyster Mushroom
Additional Seasoning- 2 Tbsp Soy Sauce
- 3 Tbsp Cooking Sake (or Soju, Mirin)
- 2 Tbsp Minced Garlic
- Pinch of Black Pepper
- 4-5 Bay Leaves

Cooking Instructions
Step 1
First, prepare 600g of bulgogi-cut pork shoulder. Add 200g of store-bought pork galbi sauce to the meat. (If you are using less pork, adjust the amount of sauce accordingly.)
Step 2
Add 2 Tbsp of soy sauce, 2 Tbsp of minced garlic, and a pinch of black pepper to season the meat.
Step 3
Wearing disposable gloves, separate the pork slices and mix them thoroughly with the marinade until evenly coated. This ensures the flavors penetrate the meat well.

Place the marinated pork in an airtight container. Lay 4-5 bay leaves on top and press down gently. Bay leaves help to remove any gamey odor from the pork. The ideal method is to marinate it the day before, but if time is short, refrigerate it for at least 1 hour to let it rest and absorb the flavors. The longer it marinates, the more tender and flavorful the meat will become.
Step 5
Slice the king oyster mushroom in half and then into thick strips. Thinly slice the 10 perilla leaves into strips. Slice the green onion diagonally.

Slice the 1/2 onion into not-too-thin slices. Gather all the prepared vegetables together.

Heat a pan and add the marinated pork. Pour in 3 Tbsp of cooking sake (or soju, mirin) and stir-fry. The alcohol will evaporate, removing any pork odor and enhancing the flavor.

Once the pork is almost cooked, add the prepared vegetables and stir-fry together. (Tip: You can add the perilla leaves later. Adding them at the very end after everything else is cooked and lightly stir-frying will preserve their fresh aroma.) If the seasoning is not to your liking, adjust with additional soy sauce.

When the onions become translucent, it means all the ingredients have harmonized beautifully. Your bulgogi is ready!
