Easy Pan-Fried Ham and Potatoes
Effortless Ham and Potato Stir-Fry, Baek Jong-won Style!
Tired of daily side dish dilemmas? This morning, I remembered the two potatoes waiting in my vegetable crisper. Let’s start making a simple and delicious pan-fried ham and potato dish, perfect as a side for your children!
Main Ingredients- 2 medium potatoes
- 1/4 bell pepper (any color, or a mix)
- 1/4 carrot
- 1/2 can of ham (like Spam or Luncheon Meat, your preference)
Seasoning & Others- Pinch of salt
- 2-3 Tbsp cooking oil
- 2 Tbsp all-purpose soy sauce (or regular soy sauce)
- 1/2 Tbsp oligosaccharide (or sugar)
- A little water
- Pinch of sesame seeds (for garnish)

Cooking Instructions
Step 1
First, peel the potatoes and rinse them under running water. Then, slice them into strips about 0.5 cm thick. Aim for bite-sized pieces that are easy for children to eat.

Place the sliced potatoes in a bowl of cold water. This process helps to remove excess starch, preventing them from sticking together when stir-fried and resulting in a cleaner texture.

While the potatoes are soaking, prepare the other ingredients. Julienne the carrot and bell pepper into similar sizes as the potatoes. Slice the ham into bite-sized pieces. (You can also dice the ham if you prefer.)

After soaking the potatoes in water for about 10 minutes, drain them thoroughly using a sieve. Ensuring the potatoes are dry is crucial for preventing oil splattering and allowing the flavors to meld properly during cooking.

Heat 2-3 tablespoons of cooking oil in a non-stick pan over medium heat. Add the drained potatoes first and begin to stir-fry. Once the potatoes start to turn translucent and slightly tender, sprinkle a pinch of salt over them for seasoning. When the potatoes are halfway cooked and softened, add the julienned carrot and sliced ham. Continue to stir-fry everything together. If the pan seems a bit dry, add 1-2 tablespoons of water to prevent sticking and keep the ingredients moist.

Once the potatoes, carrots, and ham are mostly cooked, add 2 tablespoons of all-purpose soy sauce for a savory depth of flavor. If you don’t have all-purpose soy sauce, regular soy sauce works just fine. When the vegetables are tender, add the julienned bell pepper and stir-fry briefly, just enough to keep them crisp-tender. For a beautiful sheen and a touch of sweetness, drizzle about 1/2 tablespoon of oligosaccharide around the edges of the pan.

Once all the ingredients are well-cooked and the sauce has coated everything evenly, turn off the heat. Finish by sprinkling a generous pinch of sesame seeds over the dish for added aroma and visual appeal.
