Super Simple Microwave Oatmeal Rice: A Healthy and Filling Alternative to White Rice
Lately, I’ve been opting for oatmeal for my evening meals instead of rice. While it can be cooked like porridge in a pot, I find preparing it in the microwave as a rice substitute is incredibly convenient. This method is quick and easy!
Ingredients
- 5 Tbsp Rolled Oats
- Water (enough to cover oats)
Cooking Instructions
Step 1
When cooking oatmeal in the microwave, it tends to bubble up, so I highly recommend using a bowl with some height. Otherwise, it might boil over and create a mess inside your microwave! Start by preparing 5 tablespoons of rolled oats.
Step 2
Pour just enough water over the oats so they are barely covered, ensuring the water doesn’t rise too high. Gently mix the oats and water together, then let it sit for about 5 minutes to allow the oats to absorb the liquid.
Step 3
After the oats have softened, cover the bowl with plastic wrap. (You can skip this step, but covering it helps retain moisture for a softer result.)
Step 4
Microwave on high for 30 seconds. Stir, then microwave for another 30 seconds. Stir again, and finally, microwave for 1 minute more. The total cooking time is about 2 minutes.
Step 5
And there you have it – your delicious oatmeal rice is ready! It’s important to stir the oatmeal rice right after cooking to prevent it from becoming clumpy or stiff. Enjoying this as a rice alternative can be very satisfying and filling, making it great for managing your meals. If you find the texture of the oats a bit too firm, feel free to add a little more water and microwave for an extra 30 seconds.
