- Carrot (julienned and lightly blanched)
- Cucumber (salted and squeezed dry)
- Pickled radish for kimbap
- Braised burdock root (optional, can be omitted)
- Sesame oil (a little)
- Toasted sesame seeds (a little)
Cooking Instructions
Step 1
Let’s start by gathering our ingredients. You’ll need one pack of inari pockets specifically for rolls, about 1.5 to 2 bowls of warm cooked rice, finely julienned and lightly blanched carrots, cucumber that has been salted and thoroughly squeezed to remove excess water, kimbap-style pickled radishes, and optionally, some braised burdock root for an extra flavor boost. Don’t forget a drizzle of sesame oil and a sprinkle of toasted sesame seeds. Feel free to raid your refrigerator for any other ingredients you’d like to add! Think along the lines of egg omelets, bell peppers (red or green), canned tuna, ham, shredded cabbage, imitation crab sticks (kani), or even bulgogi or chicken breast. Customize it to your liking!
Step 2
For this recipe, we’ll be skipping the seasoning packets, mayonnaise, nori sheets, sushi vinegar, and seasoned fried vegetables that sometimes come with standard inari sushi kits. However, those seasoned vegetables are great to set aside and use later for making a delicious rolled omelet or incorporating into other dishes.
Step 3
Now, let’s prepare the fillings. We have our well-drained, salted cucumber and lightly sautéed carrots. For the pickled radish, slice it in half lengthwise to make it thinner, which will help when rolling. If you have braised burdock root, adding just one strip, making sure it’s not too salty, will add a lovely depth of flavor. If you don’t have burdock root, no worries at all – it’s completely fine to leave it out.
Step 4
Here’s a little tip: While some people omit pickled radish when using salted cucumber, the sweet and tangy crunch of the radish can surprisingly awaken your palate and add a delightful contrast. Give it a try!
Step 5
If you prefer a thinner and lighter roll, try cutting your nori sheets in half before you begin. This makes them easier for children to handle and eat. It also allows you to pack in more vegetables relative to the rice, making it an excellent choice for a diet-conscious meal. While delicious eaten as is, slicing the finished rolls into bite-sized pieces and packing them into a container makes them neat and perfectly portable.
Step 6
For my husband, who loves kimbap with imitation crab sticks, I’ve added some here. The imitation crab meat provides a lovely tenderness and richness. Honestly, the inari pockets themselves are so flavorful that you don’t need many special ingredients to create a wonderfully delicious roll.
Step 7
Inari roll kimbap is truly a lifesaver on busy mornings when you need a satisfying meal quickly. You can easily add one or two of your kids’ favorite ingredients, and they are so easy to eat, making them an ideal breakfast choice.
Step 8
This versatile Inari roll kimbap is perfect as a snack, a lunchbox item, or a full meal. If you’re following a diet, consider substituting the rice with plenty of finely shredded cabbage and carrots for a healthy and delicious meal. With the beautiful spring weather, it’s the perfect season for outings! Why not pack these delightful Inari roll kimbap as part of a picnic spread, along with some refreshing drinks and fruit, to share with loved ones?
