This recipe allows you to make convenient homemade tortilla seed hotteok whenever you want, one or two at a time, without needing to use much oil. It’s a wonderfully simple and quick way to enjoy this popular Korean treat.

  • 20g Mixed Nuts (chopped)
  • 3 Tbsp Brown Sugar
  • 2/3 cup Mozzarella Cheese (approx. 50g)

Cooking Instructions

First, prepare the filling for the hotteok. It’s a great way to use up leftover nuts. Gather about 20g of your favorite nuts, such as walnuts, peanuts, or almonds.

Place the prepared nuts on a cutting board. Using the tip of a knife, finely chop them. Aim for a texture that still has a slight bite, rather than powdering them completely.

Transfer the finely chopped nuts into a bowl.

Add 3 tablespoons of brown sugar to the bowl with the nuts and mix well with a spatula or spoon. The combination of sweetness and nuttiness is simply delightful.

Prepare the mozzarella cheese, which will add a lovely gooey texture to the hotteok’s filling. Have about 2/3 cup (approximately 50g) ready.

Now, let’s start cooking the hotteok! Heat a frying pan over low heat. Place one tortilla in the pan. Cooking on low heat is key to ensuring the tortilla cooks through without burning.

Evenly spread the prepared seed and sugar mixture over one half of the tortilla. Be careful not to spread it too close to the edges, as it might spill out when you fold it.

Generously sprinkle the mozzarella cheese over the seed and sugar mixture. The melting cheese will blend beautifully with the nuts for an even richer flavor.

Fold the other half of the tortilla over to create a half-moon shape. Gently press down on the entire hotteok with a spatula or turner. This helps the sugar melt and the cheese ooze, making the outside wonderfully crispy.

Once one side is golden brown and you can see the cheese starting to melt, carefully flip the hotteok using your turner. Cook the other side until it’s also golden brown and crispy. This double-sided crispiness is fantastic.

When both sides are perfectly golden and the cheese and sugar inside have melted and are starting to ooze out, turn off the heat. Transfer the finished seed hotteok to a plate. Cut it into bite-sized pieces and enjoy it warm! It’s sure to be a hit with kids.
