Suyuk Ingredients

  • Pork neck 800g
  • Sugar 2 Tbsp (for blood removal)

Electric Rice Cooker Suyuk Ingredients

  • 1 stalk Green onion
  • 1 Onion
  • 100ml Water
  • 50ml Soy sauce
  • 50ml Mirin (rice wine)

Microwave Garlic Sauce Ingredients

  • 20-25 cloves Garlic (or 4 Tbsp minced garlic)
  • 3 Tbsp Oligodang (corn syrup)
  • 3 Tbsp Lemon juice
  • 1 Tbsp Olive oil

Cooking Instructions

Step 1

Soaking meat in cold water for a long time can be risky in hot weather. Adding 2 tablespoons of sugar helps draw out blood more quickly. Soak the pork neck in the sugar water for 30 minutes to remove any blood.

Wash the green onion and onion, then chop them into large pieces. Place all the onion at the bottom of the electric rice cooker, and add half of the chopped green onion.

Place the pork neck, from which the blood has been removed, on top of the vegetables.

Pour in 100ml of water, and gently pour 50ml of soy sauce over the meat. The soy sauce will infuse the pork with flavor.

To effectively remove any gamey smell from the pork neck, place the remaining green onion on top of the meat. Pour 50ml of mirin along the inner edge of the rice cooker pot. Mirin helps eliminate odor and tenderizes the meat.

Close the electric rice cooker lid, select the ‘Multi-Cook’ or ‘Steam’ function, set the timer for 40 minutes, and press start. (This recipe assumes the use of an electric rice cooker with a pressure cooking function. Cooking times may vary depending on your appliance, so please adjust accordingly.) After 40 minutes of cooking, keeping it on ‘Keep Warm’ for another 10 minutes will ensure extra moistness.

Slice the Suyuk into bite-sized pieces, and your tender, delicious pork neck Suyuk, made without any stove heat, is ready! You can create such a wonderful dish with just an electric rice cooker.

Now, let’s make the special garlic sauce that pairs perfectly with this delicious Suyuk! Peel and mince the garlic. Using a garlic press makes it easy, but you can also finely mince it with a knife. If using pre-minced garlic, prepare about 4 tablespoons.

Transfer the minced garlic to a microwave-safe bowl. Add 3 tablespoons of oligodang for sweetness and mix well.

Cover the bowl and microwave for 1 minute. Check if the garlic is cooked. If it’s not quite done, stir the minced garlic with a spoon, cover again, and microwave for another 30 seconds. The pungent aroma of the garlic will mellow beautifully.

Let the microwaved garlic cool down slightly. Once it’s cooled a bit, stir in 3 tablespoons of lemon juice for a zesty kick and 1 tablespoon of olive oil for a smoother consistency. For an even more delightful taste, chill it in the refrigerator before serving!
