  • Dried shredded squid (Jinmi-chae) 200g

Seasoning Ingredients

  • Soy sauce 4 Tbsp
  • Mirin (or cooking wine) 4 Tbsp
  • Minced garlic 2 Tbsp
  • Plum extract (or syrup) 1 Tbsp
  • Sugar 1 Tbsp
  • Vegetable oil 1 Tbsp
  • Oligosaccharide (or corn syrup) 1 Tbsp
  • Mayonnaise 1 Tbsp

Cooking Instructions

Step 1

First, soak the 200g of dried shredded squid in cold water for about 3-4 minutes. Remove it and gently squeeze out excess water. Then, cut it into bite-sized pieces, approximately 5-7 cm long. This step helps to ensure the squid remains tender and not too tough after cooking.

In a bowl, combine 4 Tbsp soy sauce, 4 Tbsp mirin, 2 Tbsp minced garlic, 1 Tbsp plum extract, and 1 Tbsp sugar. Whisk everything together until well combined to create a delicious sauce. This golden ratio is simple and effective!

Heat a pan over medium-low heat. Add the prepared sauce to the pan first and bring it to a simmer. Letting the sauce boil briefly before adding the squid enhances its flavor.

Once the sauce is bubbling, add the prepared dried shredded squid to the pan. Stir continuously with a spatula, mixing well to coat the squid evenly with the sauce. Be sure to keep stirring to prevent it from burning. Maintain medium heat while stir-frying.

When the sauce has reduced slightly and coated the squid nicely, add 1 Tbsp of oligosaccharide. This will add a beautiful glossy sheen and a touch of sweetness, making the dish look even more appetizing.
