Can you believe it’s already the end of the year? Time flies by so quickly! Before this year is completely over, I really want to see my friends’ faces. At home, I want to make something easy and simple. If cooking is complicated and tiresome, it can steal the joy of meeting friends and lead to frustration. That’s why I made this ‘Salmon Bibim Sauce’ using fresh salmon my son sent me – it’s easy, simple, and incredibly delicious. If you make it a day in advance, your friends’ visit will be even more joyful. This bibim sauce is not only visually appealing but also bursting with flavor, making it a perfect addition to your year-end festivities!
Main Ingredients- 600g fresh salmon fillet, cut into bite-sized pieces
- 2 Korean green chili peppers (Cheongyang peppers), finely chopped for a spicy kick
- 1/2 medium onion, thinly sliced for sweetness and texture
- Cooked rice, for serving
- Eggs, fried or poached, as desired
Special Soy Sauce Mixture- 300ml water, to adjust sauce consistency
- 150ml soy sauce, for a deep, savory flavor
- 60ml mirin (rice wine), to remove any fishy odor and enhance umami
- 60ml plum extract, for a sweet and tangy note
- 1 tbsp oligosaccharide, for a smooth sweetness and shine
- 1-2 pieces dried kelp (dashima), for a rich umami base
- 300ml water, to adjust sauce consistency
- 150ml soy sauce, for a deep, savory flavor

Cooking Instructions
Step 1
Let’s start by making the special soy sauce mixture that forms the base of our delicious Salmon Bibim Sauce. In a pot, combine 300ml water, 150ml soy sauce, 60ml mirin, 60ml plum extract, and 1 tbsp oligosaccharide. Add 1-2 pieces of dried kelp for a deep umami flavor. Bring this mixture to a boil over medium heat. Once it boils, immediately turn off the heat to prevent overcooking.
Step 2
The onion is a key ingredient that adds wonderful flavor to our bibim sauce. Take your 1/2 medium onion, peel it, and then thinly slice it. Slicing it thinly will help it blend well with the sauce and add a pleasant sweetness and texture to the final dish.
Step 3
Once the soy sauce mixture comes to a boil, add the thinly sliced onions and immediately turn off the heat. This method helps retain the onion’s crispiness while allowing its flavor to gently infuse into the sauce, making it even more delicious. Let the sauce cool completely.

Prepare 2 Korean green chili peppers for a touch of heat. Wash them, remove the stems, and finely chop them. If you enjoy spicier food, feel free to adjust the quantity to your preference.

Take your 600g of fresh salmon fillet. It’s crucial to use very fresh salmon for the best taste, free from any unpleasant odors. Cut the salmon into bite-sized pieces that are easy to eat. Avoid making them too large, as it might be difficult to mix them into your rice.

Choose an airtight container for easy storage and to allow the flavors to meld. Start by placing the bite-sized salmon pieces at the bottom of the container. Keeping the salmon chilled is important to maintain its freshness.
Step 7
Sprinkle the finely chopped green chili peppers evenly over the salmon. The chili peppers will complement the richness of the salmon, cutting through any potential gaminess and adding a delightful spicy note.

Now, pour the completely cooled soy sauce mixture over the salmon and chilies. Make sure to pour enough sauce to mostly cover the salmon. This will ensure the flavors penetrate deeply during the marinating process. Seal the container tightly and refrigerate for at least half a day, or preferably overnight, to allow the Salmon Bibim Sauce to mature and develop its rich taste.
Step 9
To serve, place a generous portion of warm cooked rice in a bowl. Top it with plenty of the marinated Salmon Bibim Sauce. To adjust the seasoning to your personal taste, it’s a good idea to reserve a little extra sauce liquid separately. You can add this to the rice as you mix, ensuring the perfect balance of flavors. Don’t make it too salty!
