Main Ingredients

  • 400g Pork (for curry or cut into bite-sized pieces)
  • 200g Onion (about 1 medium, cut into large chunks)
  • 200g Carrot (about 1 medium, cut into large cubes)
  • 200g Potato (about 1 medium, cut into large cubes)

Curry Seasoning

  • 100g Curry Roux (your preferred brand)
  • 1400ml Chicken Broth (or 1400ml water + 1 Tbsp chicken stock)

Cooking Instructions

First, prepare all your ingredients. If making homemade chicken broth is too much hassle, using 1 tablespoon of store-bought chicken stock dissolved in water will be much more convenient. Cut the carrots and potatoes into large, bite-sized cubes. Slice the onion into similar sized pieces to speed up cooking time.

Heat 1-2 tablespoons of cooking oil in a pan over medium-high heat. Add the prepared pork and sear until golden brown.

Sear the pork until it develops a nice, appetizing color. Don’t worry about cutting it smaller just yet, as we’ll be adding it back in smaller pieces later.

Utilize the flavorful drippings left in the pan from cooking the pork. First, add the onions and sauté until translucent. Once the onions start to turn clear, add the carrots and cook until they become semi-translucent, avoiding the very core. Finally, add the potatoes and stir-fry everything together for 1-2 minutes, coating the vegetables with the pork drippings to enhance the flavor.

Pour all the chicken broth (or water with chicken stock) over the sautéed vegetables and pork. Cover the pan with a lid and simmer over medium heat for about 15 minutes. The subtle sweetness of the vegetables will infuse into the broth, making the curry richer and more flavorful. Once the vegetables are tender, add the curry roux and stir well until it dissolves. For a mild and familiar taste, we recommend using Korean brands; for a more authentic curry experience, consider imported curry blocks.

Most curry roux blocks already contain a well-balanced blend of spices and seasonings, so additional seasoning might not be necessary. However, if you prefer a deeper flavor and sweetness, you can add a little honey or turmeric powder to suit your personal taste. For those who enjoy a spicier kick, a small amount of capsaicin sauce can be added for a zesty flavor.

Return the previously seared pork to the pan. Wait for the curry to come back to a boil. The pork should be mostly cooked by this point. Once the curry starts boiling, reduce the heat to low and simmer for another 3 minutes to ensure the pork is fully cooked. Your delicious pork curry will then be ready!
