Cooking Instructions
Step 1
First, prepare a frying pan with a wide base and moderate height (a wok or a deep pan is recommended). This type of pan is perfect for one-pan meals.
Step 2
Fill the pan generously with water and add 1 tablespoon of salt. Once the water comes to a rolling boil, add the fusilli pasta and cook. Aim for an ‘al dente’ texture, slightly firm to the bite, cooking for about 7-8 minutes. (Cooking times may vary by brand, so refer to the package instructions.)
Step 3
While the pasta is cooking, let’s prepare the other ingredients. Cut the bacon into bite-sized pieces (about 1cm wide). Slice or finely chop the onion. If using button mushrooms, cut them into 3-4 pieces. (Be careful when using a knife!)
Step 4
Once the fusilli pasta is cooked to your desired al dente consistency, reserve about 1 cup (approx. 150ml) of the pasta cooking water (starchy water) using a paper cup. Discard the remaining water in the pan. This starchy water will be crucial later for adjusting the sauce consistency.
Step 5
Now, let’s get cooking! In the same pan used for cooking the pasta (after draining), add the chopped bacon and onion. Stir-fry over medium heat. Cook until the bacon releases its fat and the onion becomes translucent.
Step 6
As you stir-fry, if you feel there’s too much bacon grease, gently wipe some of it away towards the edge of the pan using a paper towel. This helps reduce greasiness while enhancing the flavor.
Step 7
With a moderate amount of bacon fat remaining, add 2 tablespoons of olive oil, 1 tablespoon of minced garlic, and 3 pinches of black pepper. Continue to stir-fry over medium heat for another minute. The aroma of garlic will be wonderfully enticing!
Step 8
It’s time to add the rosé pasta sauce. Instead of pouring it all at once with a splash, slowly pour it around the edges of the pan. Be cautious, as pouring it quickly can cause hot oil to splatter!
Step 9
If you’re using the optional ingredients like butter, Parmesan cheese, cheddar cheese, or mozzarella cheese, now is the perfect time to add them! Toss in all the chosen ingredients, reduce the heat to low, and stir for about 1 more minute until the sauce is well combined and the cheese is melted. (Cheeses stored in the refrigerator melt easily, but frozen cheeses may take a bit longer.)
Step 10
Once all ingredients are beautifully combined, turn off the heat. Finally, using a spoon, gently toss the pasta and sauce from the bottom of the pan upwards, as if coating the pasta. This ensures that all the flavors meld together for a truly delicious rosé pasta. Enjoy your meal!
