Cooking Instructions
Step 1
Prepare all your ingredients in advance. Washing and finely dicing the vegetables beforehand will save you time during cooking.
Step 2
Finely mince the carrot, bell pepper, and onion. Chopping them very small makes them blend well with the egg and cook easily, ensuring even picky eaters will enjoy them.
Step 3
Heat a pan over medium-low heat with a little cooking oil. Crack one egg into the pan and scramble it lightly. Add the diced carrots and cook for about a minute. Once the egg is halfway cooked, carefully flip it to cook the other side briefly. Avoid overcooking; it should remain tender.
Step 4
Take one slice of bread and use a cup or a round cookie cutter to press and cut out the center, creating a bread frame. This will form a well for the egg to cook within.
Step 5
Reduce the heat to low. Place the bread frame onto the pan where the egg was cooked. Generously fill the hollowed-out center of the bread with mozzarella cheese. The melting cheese will help bind the bread and other ingredients together.
Step 6
Arrange the finely chopped bell pepper and onion attractively over the mozzarella cheese.
Step 7
Add sliced black olives on top of the vegetables as desired for garnish. Olives add a lovely touch of color and enhance the overall flavor.
Step 8
Carefully flip the bread slice with the egg, cheese, and vegetables. Gently press down to ensure everything adheres well. Continue cooking over low heat until the cheese is fully melted and the bread is golden brown on both sides. A nice golden crust makes it even more delicious.
Step 9
Transfer the finished egg bread toast to a serving plate. Just before serving, drizzle with a little honey for sweetness and a dollop of mayonnaise for creaminess. The combination of honey and mayonnaise is simply divine!
Step 10
Take the other slice of bread and cut out the center circle, just as you did before. This piece will be used to cover the toast later.
Step 11
Wipe the pan clean, add a touch more cooking oil, and place the bread frame (with the center cut out) back into the pan. Carefully crack a second egg into the hollow center of the bread. Cook slowly over low heat. This method allows the egg to soak into the bread, making it extra soft and flavorful.
Step 12
When the egg is about halfway cooked, generously top the egg with the finely chopped carrots and more mozzarella cheese. The cheese will melt and nicely cover the egg and vegetables.
Step 13
While the egg and cheese are cooking, gently place the cut-out bread circle on top of the egg and cheese. Lightly press it down; this will help hold the fillings in place when you flip the toast.
Step 14
Carefully flip the entire toast so the bread side is now on the bottom. It’s crucial to maintain low heat to prevent sticking. Continue cooking until the bread is golden brown and the cheese is completely melted and gooey.
Step 15
Once both sides are beautifully golden, transfer the toast to a plate. For this version, you can add the reserved chopped bell peppers and onions on top, along with sliced olives and a drizzle of honey for a delightful finish.
Step 16
Don’t forget about the bread centers you cut out! Toast these separately until golden and crispy. They make a wonderful crunchy side to enjoy with your main toast. Serve everything together for a complete and satisfying meal!
