Main Ingredients- 1 pack Enoki Mushrooms (approx. 400g)
- 110g Sliced Bacon
Cooking Instructions
Step 1
Prepare the Enoki Mushrooms: Trim about 1cm off the root end of the enoki mushrooms. If there’s any dirt on the caps, gently clean them off.
Step 2
Portion the Enoki Mushrooms: Separate the clump of enoki mushrooms into manageable portions for rolling with bacon (usually 2-3 sections per bunch). Dividing them into appropriate thicknesses is key; too thin and they’ll lack texture, too thick and they might not cook through evenly.
Step 3
Roll with Bacon: Take a portion of the prepared enoki mushrooms and place it on about half the length of a slice of bacon. Roll the bacon tightly around the mushrooms. Ensure the bacon wraps snugly to prevent the mushrooms from slipping out. Rolling firmly is the secret!
Step 4
Skewer the Rolls: Thread 2-3 of the rolled enoki mushroom and bacon bundles onto skewers. This makes them easier to cook and serve.
Step 5
Make the Special Sauce: In a small bowl, combine 1 Tbsp soy sauce, 2 Tbsp mirin, 2 Tbsp corn syrup, and 2 Tbsp oyster sauce. Whisk well to create your delicious special sauce. This is the perfect balance of sweet and savory!

Brush with Sauce: Using a brush, generously coat the skewers of enoki mushroom and bacon rolls with the prepared special sauce, on both sides. Make sure to coat them thoroughly so the sauce can permeate.
Step 7
Cook the Rolls: Lightly grease a pan with oil and cook the enoki mushroom and bacon rolls over medium heat, turning occasionally, until golden brown and the bacon is crispy. The sauce should reduce slightly. (Alternatively, you can bake them in a preheated oven at 200°C (400°F) for about 15 minutes, flipping halfway. Baking can result in more even cooking than pan-frying.)
