Easy Cereal Granola Energy Bars

I made simple energy bars using leftover cereal at home. These are great for a quick breakfast replacement. Enjoy these delicious, chewy bars!

Ingredients

  • 70g Granola cereal
  • 2 handfuls Almonds
  • 2 handfuls Cashew nuts
  • 1 cup Oligosaccharide (rice syrup)

Cooking Instructions

First, prepare about 70g of granola cereal. Place it in a zip-top bag and gently crush it with your hands to break it into bite-sized pieces. Aim for a chunky texture rather than finely crushed, to maintain a pleasant chewiness.

Prepare two handfuls each of almonds and cashew nuts to add a nutty flavor and satisfying crunch. Feel free to substitute or add other types of nuts according to your preference. You can use them whole for texture, or chop them into smaller pieces.

Combine the prepared granola cereal, almonds, and cashew nuts in a bowl. Mixing the dry ingredients first will make it much easier to incorporate the oligosaccharide later.

Transfer the granola and nuts from the bowl into a wide pan. Lightly toast them over low heat for about 1-2 minutes. This step enhances the nutty aroma and makes the cereal crispier. Be careful not to burn them.

Reduce the heat to the lowest setting. Pour in the oligosaccharide (rice syrup), approximately 1/3 of the total volume of the dry ingredients (about 200g). The amount of oligosaccharide is crucial for the bar’s stickiness and texture; too little and they won’t bind, too much and they’ll be too gooey. Start with the recipe amount and adjust if needed based on consistency.

Continuously stir the mixture with a spatula over low heat until the oligosaccharide is well combined with the ingredients and the mixture starts to thicken slightly, becoming slightly ‘꾸덕꾸덕’ (chewy and thick). This process allows the oligosaccharide to bind everything together, helping the bars set firmly.

Line a tray or baking sheet with parchment paper. Pour the cooked granola mixture onto the parchment paper. Use a spatula or a flat object to spread it out as evenly and thinly as possible. A uniform thickness will ensure even setting and make cutting easier.

Place the shaped granola bars in the refrigerator and let them chill for about 10 minutes. As they cool, the oligosaccharide will harden, binding the ingredients firmly together. Avoid chilling for too long, as they might become too hard; 10 minutes is usually sufficient.

Once chilled, remove the granola bars from the refrigerator. Cut them into desired, easy-to-eat portions. Lightly wetting your knife or tilting the bar can help you cut cleanly without sticking. Cut them into your preferred shapes and sizes.
