  • 400mL water

  • 1 tsp salt (adjust to taste)
  • 1 Tbsp chicken stock (for added umami)
  • 1 Tbsp toasted sesame seeds (for garnish)

First, prepare 90g of brown rice oatmeal. Brown rice oatmeal offers a slightly chewier texture and more nutrients than regular oatmeal, making for a healthier porridge.

Next, crack 2 fresh eggs into a clean bowl. Add 1 tsp of pepper and 1 tsp of salt, and whisk well. Using a whisk to gently mix the eggs until smooth and lump-free will yield the best results.

Now, combine 400mL of water and the prepared brown rice oatmeal in a pot. Bring to a boil over medium-high heat (around level 450 on an induction cooktop). Once boiling, reduce the heat to medium-low and cook for 5 to 7 minutes, stirring constantly to prevent sticking. The oatmeal will absorb the liquid and thicken into a porridge consistency.

Once the oatmeal has cooked and thickened into a porridge, slowly pour in the whisked egg mixture. Continue to stir gently for about 1 minute as the egg cooks. This ensures the egg is cooked through and remains tender. Be careful not to overcook, as the egg can become tough.
